- Manage and monitor the precise soaking, grinding, and fermentation processes of Idli and Vada batter under controlled temperature conditions.
- Ensure the iconic "fluffiness" of Idli and the perfect crispy-yet-soft texture of Medu Vadas across multi-ton daily production runs.
- Standardize ingredient ratios (rice, urad dal, water salinity) adjusting dynamically for seasonal variations in ambient temperature and humidity.
- Implement strict quality benchmarks to manage shelf-life, batter stability, and prevent over-fermentation or souring during transit.
- Supervise and optimize the operation of commercial food production machinery, including heavy-duty commercial grinders, automatic Idli steaming plants, and automated Medu Vada shaping/frying machines.
- Collaborate with the engineering and maintenance teams to ensure all machinery is calibrated correctly for weight uniformity, oil temperature stability (for Vadas), and steam pressure (for Idlis).
- Enforce efficient throughput to maximize output while tracking and eliminating ingredient wastage on the factory floor.
- Maintain an uncompromising standard of hygiene in compliance with food safety authorities (FSSAI/HACCP).
- Oversee the implementation of strict sanitization protocols (Clean-In-Place / CIP) for grinders, frying lines, and storage tanks to prevent cross-contamination or wild yeast/mold growth.
- Conduct continuous batch testing for taste, texture, shape, and food safety before packaging.
- Source and evaluate the quality of raw materials (dal, rice types, frying oils), ensuring continuous alignment with cost targets without compromising on the authentic taste.
- Monitor daily production yields and optimize processes using data-driven resource metrics to eliminate bottlenecks in the grinding or frying phases.
- Manage the cold-chain or packaging-readiness parameters before products move to the logistics stage.
