Job Summary:
The Senior Staff Cafeteria Cook is responsible for preparing and serving nutritious, hygienic, and high-quality meals for hotel employees, with a strong focus on authentic Kerala cuisine. The role ensures consistency in taste, adherence to food safety standards, and efficient kitchen operations while catering to a diverse workforce.
Key Responsibilities:
- Prepare daily staff meals with emphasis on traditional Kerala dishes such as sambar, avial, thoran, olan, fish curry, and rice-based preparations.
- Plan and assist in creating rotating menus to ensure variety and balanced nutrition for staff.
- Ensure proper mise en place and timely preparation of meals according to service schedules.
- Maintain consistency in taste, portioning, and presentation of all dishes.
- Monitor food stock levels and coordinate with the store/chef for requisitions.
- Ensure proper storage and handling of raw materials in line with food safety standards.
- Maintain cleanliness and hygiene in the kitchen, equipment, and work areas at all times.
- Follow HACCP and hotel food safety guidelines strictly.
- Minimize food wastage through efficient utilization of ingredients.
- Assist in receiving and checking supplies for quality and freshness.
- Adapt menus based on staff feedback and dietary requirements when required.
- Support other kitchen operations when needed.
Qualifications & Experience:
- Minimum 5-8 years of experience in a similar role, preferably in a hotel or institutional kitchen.
- Strong knowledge of Kerala cuisine and traditional cooking techniques.
- Basic culinary certification or diploma preferred.
- Experience in bulk cooking for staff cafeterias or canteens is an advantage.
Skills & Competencies:
- Expertise in authentic Kerala cooking styles and ingredients.
- Good understanding of nutrition and balanced meal preparation.
- Ability to cook in large quantities efficiently.
- Strong knowledge of food safety and hygiene standards.
- Time management and ability to work under pressure.
- Team player with a positive attitude.
Working Conditions:
- Ability to work in shifts, including early mornings.
- Physically fit to stand for long hours and handle kitchen equipment.
