- Prepare, marinate, and cook a variety of tandoor dishes such as kebabs, rotis, naans, kulchas, and tikkas according to standard recipes.
- Ensure proper handling and maintenance of the tandoor oven and related equipment.
- Maintain cleanliness and organization in the tandoor section and ensure mise-en-place is always ready.
- Assist the Tandoor Chef / CDP in developing new menu items and improving existing recipes.
- Monitor food portions, cooking times, and presentation standards for consistency.
- Follow all food safety, hygiene, and sanitation standards as per hotel policies and HACCP guidelines.
- Check and manage the quality and freshness of ingredients before use.
- Coordinate with other kitchen sections for timely preparation and delivery of orders.
- Ensure minimal food wastage and proper storage of raw and cooked food.
- Maintain proper temperature control in storage and preparation areas.
- Assist in stock rotation, daily inventory, and requisition of supplies as needed.
- Support junior team members and help them learn tandoor techniques and kitchen procedures.
