Job Summary:
We are looking for an experienced and dynamic Central Kitchen Production Manager to oversee daily food production operations and ensure smooth supply to our 15 branch outlets. The ideal candidate will have strong leadership skills, experience in high-volume kitchen operations, and a focus on quality, efficiency, and food safety standards.
Key Responsibilities:
- Plan and manage daily food production schedules based on demand from 13 branches.
- Supervise Kubbus production line ensuring consistency, quality, and production targets.
- Manage snack production including bakery and ready-to-serve items.
- Oversee pantry section operations for preparation, packing, and dispatch.
- Ensure timely distribution and logistics coordination to all branch outlets.
- Monitor food quality, taste consistency, and portion standards across all products.
- Implement and maintain food safety and hygiene standards (HACCP / municipality regulations).
- Supervise housekeeping staff to ensure production areas remain clean and sanitized.
- Manage kitchen staff scheduling, shift planning, and workforce productivity.
- Conduct daily production meetings and staff briefings.
- Control raw material inventory, stock rotation (FIFO), and wastage reduction.
- Coordinate with procurement team for ingredient purchasing and supplier management.
- Monitor equipment performance and arrange maintenance when required.
- Maintain production records, reports, and documentation.
- Ensure compliance with company policies and food safety regulations.
- Train new staff on production procedures, hygiene practices, and quality standards.
- Improve production efficiency and workflow optimization in the central kitchen.
- Coordinate with branch managers regarding daily orders, complaints, and feedback.
- Implement cost control measures and reduce operational losses.
- Manage emergency situations or production delays to avoid supply disruptions.
- Conduct regular inspections of production areas and storage facilities.
Requirements:
- Proven experience in central kitchen or large-scale food production management.
- Strong knowledge of food safety standards (HACCP).
- Ability to manage multiple operations and teams efficiently.
- Good leadership and communication skills.
- Preferable languages: Kannada, Malayalam, and Hindi.
- Experience in inventory management and cost control.
