Job Summary
Hotel Aida is looking for a skilled and passionate Chef de Partie (CDP) – Tandoor to lead the Tandoor section of our kitchen. The ideal candidate should have excellent knowledge of Indian tandoor cuisine, including kebabs, tikkas, naan, rotis, and grilled specialties. The candidate must ensure consistent food quality, maintain hygiene standards, and support smooth kitchen operations during service. The role also includes supervising junior kitchen staff assigned to the Tandoor section.
Key Responsibilities
- Independently manage the daily operations of the Tandoor section.
- Prepare and cook tandoori breads, kebabs, tikkas, grills, and other North Indian specialties as per standard recipes.
- Ensure all dishes are prepared with consistency in taste, quality, and presentation.
- Prepare mise en place before each service and maintain sufficient stock throughout operations.
- Monitor cooking temperatures and maintain the tandoor oven in safe working condition.
- Coordinate with the Sous Chef and Executive Chef regarding menu planning and daily production.
- Supervise and guide Commis chefs and trainees working in the section.
- Minimize food wastage through proper portion control and inventory management.
- Ensure cleanliness, sanitation, and food safety standards are maintained in accordance with HACCP guidelines.
- Check the freshness and quality of raw materials before preparation.
- Assist in stock requisition, receiving, and proper storage of ingredients.
- Maintain discipline and effective communication within the kitchen team.
- Follow all hotel policies, safety procedures, and grooming standards.
Required Qualifications
- Diploma/Degree in Hotel Management or Culinary Arts is preferred.
- Minimum 4–6 years of experience in hotel or fine dining kitchens, with at least 2 years as a CDP or DCDP in the Tandoor section.
- Strong knowledge of North Indian cuisine, tandoor operations, breads, kebabs, and grilled dishes.
- Ability to work efficiently in a fast-paced kitchen environment.
- Excellent leadership, teamwork, and communication skills.
- Knowledge of food safety and hygiene practices is essential.
