Job Description: Kitchen Steward
Department: Food & Beverage / Stewarding
Reports To: Chief Steward / Kitchen Manager / Executive Chef

Job Purpose
The Kitchen Steward is responsible for maintaining the cleanliness, sanitation, and organization of the kitchen, dishwashing areas, and food preparation surfaces. This role ensures that the culinary team has a steady supply of clean equipment and that the facility strictly adheres to health, safety, and hygiene standards.
Key Responsibilities1. Dishwashing & Sanitation
- Operate commercial dishwashing machinery efficiently to clean plates, glassware, and silverware.
- Manually wash, scrub, and sanitize heavy cooking equipment, including pots, pans, trays, and utensils.
- Maintain proper chemical levels, water temperatures, and sanitization cycles in accordance with health department regulations.
2. Kitchen Cleanliness & Maintenance
- Sweep, mop, and scrub kitchen floors, walk-in coolers, and dry storage areas throughout the shift.
- Clean and sanitize food preparation tables, counters, walls, and stainless-steel surfaces.
- Perform deep cleaning tasks on heavy kitchen equipment (grills, deep fryers, ovens, and exhaust hoods) as scheduled or required.
3. Organization & Inventory
- Sort, stack, and safely store clean dishes, cutlery, and kitchenware in their designated areas.
- Ensure the line cooks and service staff are continuously restocked with clean equipment during busy service hours.
- Monitor levels of cleaning supplies, detergents, and chemicals, and report shortages to the supervisor.
4. Waste & Pest Management
- Empty, clean, and reline kitchen trash cans, recycling bins, and organic waste containers regularly.
- Ensure the outdoor garbage area, loading dock, and recycling zones are kept clean, organized, and free of debris to prevent pests.
Skills & Qualifications
- Experience: Previous experience as a dishwasher, steward, or cleaner in a restaurant, hotel, or banquet environment is preferred but not mandatory.
- Stamina & Physical Strength: Ability to stand, walk, bend, and lift heavy loads (up to 40–50 lbs / 20 kg) continuously for long periods.
- Speed & Efficiency: Ability to work quickly and stay organized under pressure during high-volume rush periods.
- Teamwork & Communication: Strong work ethic with a cooperative attitude; ability to follow instructions from the culinary and management teams.
- Hygiene Standards: Solid understanding of basic food safety practices and proper handling of cleaning chemicals.
- Flexibility: Willingness to work a flexible schedule, including evenings, weekends, and holidays.
