Malayalam-speaking candidates will be given preference.
Must be willing to relocate to Noida, Uttar Pradesh for this position.
Proven experience in authentic Kerala, Malabar, and South Indian cuisine is essential.
Experience preparing traditional Kerala dishes such as appam, parotta, Malabar biryani, seafood specialties, and regional curries is highly preferred.
Job Overview
We are looking for an experienced Head Chef with strong expertise in authentic Kerala, Malabar, and South Indian cuisine to lead the kitchen operations of a premium South Indian restaurant in Noida.
Candidates from Kerala are strongly preferred. The ideal candidate should have hands-on experience preparing traditional Kerala dishes and be comfortable communicating in Malayalam, as the kitchen team includes staff from Kerala.
The candidate should have extensive knowledge of Kerala culinary traditions, including appam, parotta, puttu, seafood specialties, Malabar biryani, regional curries, and traditional South Indian recipes, while maintaining high standards of food quality and kitchen operations.
Key Responsibilities
- Oversee and manage day-to-day kitchen operations.
- Ensure consistency in food quality, taste, and presentation.
- Maintain high standards of hygiene, sanitation, and food safety.
- Supervise food preparation and service during all operating hours.
- Implement and maintain standardized recipes and cooking procedures.
- Train, mentor, and supervise kitchen staff.
- Prepare staff schedules and manage shift allocations.
- Monitor inventory and coordinate procurement requirements.
- Minimize food wastage and maintain food cost controls.
- Coordinate with suppliers and vendors for timely procurement.
- Ensure smooth kitchen workflow and operational efficiency.
- Support menu improvement and maintain authenticity of Kerala and South Indian dishes.
Requirements
- 5–10 years of experience in professional kitchen operations.
- Minimum 2 years of experience in a Head Chef, Executive Chef, Sous Chef, or similar leadership role.
- Strong expertise in Kerala, Malabar, and South Indian cuisine.
- Excellent knowledge of appam, parotta, dosa, seafood preparations, curries, and traditional cooking techniques.
- Ability to communicate in Malayalam is highly preferred.
- Strong leadership, team management, and organizational skills.
- Ability to work effectively in a fast-paced restaurant environment.
- Experience working in Kerala-style or South Indian specialty restaurants is preferred.
