Job Summary
The Tandoor & Chinese Chef is responsible for preparing authentic tandoor and Chinese cuisine while maintaining high standards of food quality, hygiene, presentation, and kitchen safety. The role includes managing both kitchen sections efficiently, ensuring timely food preparation, and delivering excellent guest satisfaction in accordance with hotel standards.
Key Responsibilities
- Prepare and cook a variety of tandoor dishes such as kebabs, naan, roti, tikka, and grilled items.
- Prepare authentic Chinese dishes including noodles, fried rice, soups, sauces, appetizers, and main courses.
- Marinate meats, seafood, and vegetables according to standard recipes.
- Operate and maintain tandoor ovens, grills, and wok stations safely and efficiently.
- Ensure consistency in taste, quality, portioning, and food presentation.
- Prepare mise en place and ingredients for daily kitchen operations.
- Maintain cleanliness, hygiene, and organization of all kitchen sections.
- Monitor inventory levels and coordinate with stores/purchase departments for stock requirements.
- Minimize food wastage and follow portion control standards.
- Coordinate with kitchen and service staff to ensure timely order execution.
- Follow all food safety, hygiene, and sanitation procedures as per hotel policy.
- Train and support junior kitchen staff when required.
- Assist in menu planning, recipe standardization, and introducing new dishes.
Required Skills & Qualifications
- Proven experience in both Tandoor and Chinese cuisine preparation.
- Knowledge of Indian tandoor cooking techniques and Chinese wok cooking methods.
- Ability to work in a fast-paced hotel or restaurant kitchen.
- Good understanding of food safety and hygiene standards.
- Strong teamwork and communication skills.
- Ability to handle pressure during peak service hours.
- Flexibility to work shifts, weekends, and holidays.
Experience
- 3 –5 years of relevant experience in hotel or restaurant kitchens.
Educational Qualification
- Diploma or certification in Culinary Arts preferred.
- Food safety or hygiene certification is an added advantage.
