Position Overview
We are looking for a highly experienced Senior Food Process Engineer to lead the technical development, commercialization, process engineering, and production optimization of our Ready-to-Eat, Ready-to-Cook, Freeze-Dried, and Dehydrated food portfolio.
The successful candidate will play a leadership role in building new products from concept to commercial production while ensuring the highest standards of quality, food safety, efficiency, and regulatory compliance.
This position is ideal for professionals who have successfully developed and commercialized food products in industrial manufacturing environments and possess strong expertise in food process engineering, freeze-drying, thermal processing, shelf-life enhancement, and product innovation.

Key Responsibilities
1. Product Development & Commercialization
* Lead end-to-end development of innovative Ready-to-Eat (RTE), Ready-to-Cook (RTC), Instant, and Freeze-Dried food products.
* Develop formulations for freeze-dried fruits, vegetables, complete meals, gravies, curry bases, soups, sauces, seasonings, snacks, beverage mixes, and functional foods.
* Conduct laboratory trials, pilot trials, and commercial-scale production validation.
* Scale formulations from laboratory to industrial manufacturing.
* Standardize recipes, process parameters, and manufacturing procedures.
* Improve product taste, aroma, texture, nutrition, appearance, and overall consumer acceptance.
* Develop products with extended shelf life while maintaining nutritional quality.
* Support successful commercialization of new products and continuous product improvement.

2. Freeze-Drying & Process Engineering
* Design and optimize freeze-drying cycles for various food categories.
* Optimize freezing, primary drying, and secondary drying processes.
* Improve drying efficiency while preserving product structure, colour, flavour, and nutritional value.
* Develop processing parameters for thermal processing, vacuum drying, dehydration, blanching, cooking, concentration, and other food manufacturing operations.
* Validate production processes and establish Critical Process Parameters (CPPs).
* Conduct process capability studies and equipment performance validation.
* Troubleshoot manufacturing challenges and recommend engineering improvements.
* Assist in commissioning, qualification, and optimization of new processing equipment and production lines.

3. Production & Manufacturing Excellence
* Provide technical leadership for daily manufacturing operations.
* Coordinate with Production, Quality Assurance, Quality Control, Maintenance, Procurement, Packaging, Warehouse, and Supply Chain teams.
* Improve plant productivity, equipment utilization, and manufacturing efficiency.
* Minimize process losses, wastage, and production downtime.
* Develop Standard Operating Procedures (SOPs), Batch Manufacturing Records (BMRs), and Work Instructions.
* Monitor production KPIs and drive continuous process improvements using Lean Manufacturing and Root Cause Analysis techniques.

4. Packaging Development & Shelf-Life Enhancement
* Develop packaging solutions suitable for moisture-sensitive and oxygen-sensitive food products.
* Evaluate multilayer laminates, vacuum packaging, Modified Atmosphere Packaging (MAP), oxygen absorbers, and desiccant systems.
* Conduct packaging compatibility studies and transportation trials.
* Perform shelf-life validation through accelerated and real-time stability studies.
* Monitor moisture migration, water activity, oxidation, colour stability, and sensory performance during storage.

5. Quality Assurance, Food Safety & Regulatory Compliance
* Ensure compliance with FSSAI, GMP, HACCP, ISO 22000, and applicable national and international food regulations.
* Develop product specifications, quality standards, inspection procedures, and validation protocols.
* Participate in internal audits, external audits, and regulatory inspections.
* Establish preventive quality systems and CAPA (Corrective and Preventive Action) programs.
* Ensure complete traceability and documentation throughout manufacturing.

6. Research & Innovation
* Research emerging food technologies, ingredients, preservation methods, and processing techniques.
* Evaluate new ingredients, functional ingredients, flavours, stabilizers, emulsifiers, and packaging materials.
* Collaborate with ingredient suppliers, machinery manufacturers, research institutes, and technical consultants.
* Drive continuous innovation across Adwait Farms’ product portfolio.

7. Cost Optimization & Operational Excellence
* Improve manufacturing economics through process optimization.
* Reduce ingredient costs without compromising product quality.
* Optimize Bill of Materials (BOM), manufacturing yield, and process efficiency.
* Evaluate new machinery and technologies to improve productivity and reduce operating costs.
* Support capacity planning and production expansion projects.

8. Leadership & Team Development
* Lead and mentor Food Technologists, Production Engineers, QA/QC personnel, and plant operators.
* Build technical capabilities through structured training programs.
* Foster a culture of innovation, continuous improvement, food safety, and operational excellence.
* Work closely with senior management on strategic product and manufacturing initiatives.

Required Qualifications
Essential
* B.Tech / B.E. in Food Engineering
* B.Tech / B.E. in Food Technology
* B.Tech in Food Process Engineering
* M.Tech in Food Engineering or Food Technology
Preferred
* M.Sc. in Food Science / Food Technology
* Additional certifications in HACCP, ISO 22000, Lean Manufacturing, Six Sigma, or Food Safety Systems.

* Minimum 10 years of relevant experience in food manufacturing.
* Proven experience in commercial-scale food processing plants.
* Strong background in product commercialization and industrial process development.
* Experience with freeze-drying, dehydration, thermal processing, vacuum processing, retort processing, or related food technologies.
* Experience in commissioning or scaling new food manufacturing facilities will be an added advantage.
