Position: Food technologist - Retort Processing

Job Summary:
The Retort Technologist is responsible for developing, validating, implementing, and continuously improving thermal processing technologies for commercially sterile food products. The role ensures products achieve required microbiological safety while maintaining optimum sensory quality, nutritional value, and shelf life.
The candidate will lead retort process development, thermal validation, packaging compatibility evaluation, and process optimization for ambient shelf-stable food products.
Key responsibilities:
Thermal Process Development
· Establish retort recipes for various food categories.
· Calculate required sterilization values (F₀).
· Determine heating and cooling profiles.
Retort Validation
· Heat penetration & Temperature distribution studies
· Cold spot determination & Retort mapping
· Venting validation & Process confirmation trials
Packaging Compatibility
· Evaluate suitability of Retort pouches, PP cups, CPET trays, Glass jars, Tin cans, Flexible packaging
· Provide technical support during production by Setting retort parameters & Monitoring batch records
Product Development
· Support R&D by Scaling laboratory products to commercial production
· Optimizing formulations for retorting & Minimizing texture degradation
· Preventing flavour loss & Improving product quality
· Documentation, equipment management and validation
Qualification:
B.tech or M. Sc. In Food technology with 5 to 8 years of experience in Retort processing of foods, RTC & RTE and compliance.
Job Type: Full-time
Pay: ₹30,000.00 - ₹40,000.00 per month
