Job Title: Commis III – Bakery & Pastry
Summary:
The Commis III – Bakery & Pastry assists the bakery and pastry team in the preparation and production of baked goods, desserts, pastries, and breads under the supervision of senior chefs. The role is responsible for supporting daily operations while maintaining high standards of food quality, hygiene, and safety.
I. Specific Duties and Responsibilities
- Assists in the preparation and production of cakes, pastries, breads, desserts, and other bakery items.
- Prepares ingredients and daily mise-en-place according to recipes and production requirements.
- Supports senior pastry chefs and bakers in all phases of bakery and pastry operations.
- Ensures consistency in product quality, presentation, and portion control.
- Maintains cleanliness and organization of the bakery and pastry work areas.
- Operates bakery equipment safely and according to established procedures.
- Ensures proper storage, handling, and rotation of ingredients and finished products.
- Checks expiry dates and maintains food safety standards at all times.
- Follows recipes, production schedules, and instructions from supervisors.
- Assists in decorating, finishing, packaging, and displaying bakery and pastry products.
- Participates in training and continuously develops bakery and pastry skills.
- Reports equipment malfunctions, shortages, or quality concerns to supervisors.
- Carries out any reasonable duties assigned to support the smooth operation of the bakery and pastry section.
II. General Responsibilities

- Follow assigned schedules and workstations as directed by the Executive Chef, Pastry Chef, or Sous Chef.

- Adhere to all company policies, procedures, and regulations.
III. Occasional Responsibilities
- Assist other kitchen sections during peak periods, staff shortages, or emergencies.
- Support special events, functions, and seasonal bakery production.
- Assist with inventory counts and stock organization.
- Perform any other reasonable duties assigned by management.
Requirements
- Previous experience in a bakery, pastry kitchen, hotel, restaurant, or catering environment preferred.
- Basic knowledge of baking techniques, pastry preparation, and dessert production.
- Understanding of food hygiene and HACCP standards.
- Good communication and teamwork skills.
- Ability to work under pressure and meet production deadlines.
- Passion for baking, pastry, and continuous learning.
