Delhi Public School, Gurugram, Sector 67A is seeking an experienced and accomplished professional to lead the complete food and mess function for its upcoming Residential Boarding Programme.
The ideal candidate will be responsible for establishing and managing a safe, nutritious, efficient, and student-centric food service system, ensuring high standards of quality, hygiene, service, and cost management.
Key Responsibilities
- Lead menu planning and nutrition-focused meal programmes covering breakfast, lunch, snacks, and dinner.
- Develop and manage 4–6 week rotating menus that are balanced, varied, and age-appropriate.
- Oversee procurement, vendor selection, quality control, deliveries, and alternate sourcing.
- Manage food costing, portion control, production planning, consumption, and wastage.
- Lead, train, and supervise the kitchen and mess team, ensuring smooth daily operations.
- Establish and maintain high standards of food safety, hygiene, sanitation, storage, and temperature control.
- Manage inventory, stock levels, expiry control, and reconciliation.
- Ensure appropriate arrangements for food allergies, special diets, vegetarian/non-vegetarian preferences, and medically prescribed meals.
- Monitor student feedback and food preferences and continuously improve menus and service.
- Oversee the maintenance, utilisation, and upkeep of kitchen equipment and facilities.
- Develop and maintain recipes, SOPs, checklists, cleaning schedules, and operational documentation.
- Establish contingency plans, backup suppliers, and emergency food arrangements.
- Ensure the overall food programme is nutritious, hygienic, cost-effective, consistent, and student-friendly.
Desired Profile
- 8–10 years of relevant experience in professional kitchen or institutional food service operations.
- Minimum 3–5 years of experience in a supervisory/managerial capacity.
- Experience in boarding/residential schools, universities, hospitals, institutional kitchens, hotels, or corporate cafeterias preferred.
- Proven experience managing food services for 100–200+ individuals at scale.
- Strong expertise in menu planning, food costing, procurement, inventory, food safety, and team management.
- Strong organisational and leadership skills with the ability to build systems and independently manage the complete food and mess function.
- A strong understanding of nutrition, hygiene, quality standards, and student-specific dietary requirements will be an advantage.
