About Marabu Biriyani
Marabu Biriyani is a biryani brand anchored on one fixed ritual — every meal served on a banana leaf, eaten by hand — while the recipe underneath flexes by region: Hyderabadi Dum, Dindigul Style, Ambur Style, and more as we grow. Alongside biryani, the menu covers chicken and mutton gravies, Indo-Chinese items like chilly chicken, fried rice, other fast-food style items, and both veg and non-veg dishes. We're early, we're serious about doing this right, and the kitchen's consistency is the foundation everything else gets built on.
About the Role
Twelve months from now, this person will have turned our full menu — biryani, gravies, Indo-Chinese, fried rice, fast food, and sweets — into documented, repeatable standards that taste the same order after order, whether they're cooking it themselves or training someone else to. They'll own recipe consistency and cooking speed across the entire kitchen as order volume grows.
What You'll Do
- Cook our biryani SKUs to recipe standard — dum technique, rice handling (basmati and seeraga samba), marination, and masala consistency, batch after batch.
- Cook the full à la carte menu to order — chicken and mutton gravies, Indo-Chinese items (chilly chicken and similar), fried rice, other fast-food style items, and veg and non-veg dishes — fast and consistent, even with multiple orders running at once.
- Own kitchen hygiene and food safety, in line with FSSAI standards.
- Build and maintain a written SOP for every dish on the menu — ingredients, quantities, method, and plating — so quality holds no matter who's cooking.
- Manage day-to-day kitchen stock and ingredient ordering, and flag quality or cost issues early.
- Train and mentor a kitchen assistant as the team grows.
- Work with us to refine and taste-test new dishes as we expand the menu.
What We're Looking For
Required:
- Proven experience cooking biryani professionally, with real hands-on dum-cooking skill.
- Comfortable cooking a broad range — gravies, Indo-Chinese, fried rice, and fast-food style items — quickly and to order, not just in slow batch preparation.
- Solid understanding of spices, marination, and rice handling for at least one South Indian biryani style.
- Comfortable with food hygiene and kitchen safety practices.
- Reliable — someone we can build a consistent daily standard around.
Preferred (nice to have):
- Experience with more than one regional biryani style (Hyderabadi, Dindigul, Ambur, Kolkata, etc.).
- Experience making Indian sweets/desserts — this is a distinct skill from savory cooking, so it's a strong plus rather than a baseline requirement.
- Experience training or mentoring junior kitchen staff.
- Comfortable working in a small, growing kitchen where processes and SOPs are still being built, not just followed.
Compensation
Competitive, based on experience — discussed directly during the interview.
Process
A short interview first, followed by a paid trial cook-off in our kitchen — we want to taste your food as much as talk about it. Strong trials lead to a paid trial period, then a permanent role.
