Position: Food Technologist – Operations & Quality
Organization: Kamla & RUDI
Location: Ahmedabad (with regular travel across units and field locations)
Employment Type: Full-Time
Experience Required:
- 10–12 years of relevant experience preferred
- Minimum 5 years of core experience in the food industry (mandatory)
- Experience in Agro Processing / Food Production / FMCG / Institutional Kitchens / Startups
1. Role Purpose
The Food Technologist – Operations & Quality will be responsible for end-to-end food systems management across Kamla and RUDI, including bakery operations, kitchen management, agro-based processing, and product quality systems.
The role focuses on standardization, food safety, operational efficiency, and scalability, ensuring strong systems across urban outlets and rural production ecosystems, while building long-term grassroots capacity.
2. Key Responsibilities
A. Food Production & Process Standardization (Kamla – All Units)
- Oversee all food production operations (bakery, kitchen, ready-to-eat items)
- Standardize recipes, batch processing, and portioning across locations
- Ensure uniform taste, quality, and presentation across all outlets
- Improve production workflows and operational efficiency
B. Agro Processing & Product Quality (RUDI)
- Manage processing and quality control of agri-based products (spices, grains, value-added products)
- Ensure proper cleaning, grading, processing, and packaging standards
- Improve shelf life, storage practices, and product consistency
- Work closely with field teams to ensure quality at source level
C. Food Safety, Compliance & Audit
- Ensure strict adherence to FSSAI guidelines and hygiene standards
- Implement and monitor SOPs for food safety across all units
- Conduct regular audits, inspections, and compliance checks
- Build systems for quality assurance and risk control
D. Operations & Multi-Unit Coordination
- Coordinate across multiple Kamla outlets and RUDI processing centers
- Support new unit setup, expansion, and vendor onboarding
- Ensure efficient production planning, logistics, and supply chain coordination
- Manage food transportation and distribution systems
E. Training & Capacity Building (Critical Role)
- Train kitchen staff, members, and field teams on:
- Food processing techniques
- SOPs and operational systems
- Hygiene and food safety standards
- Build long-term capabilities at grassroots level
- Ensure continuous skill development and performance improvement
F. Product Development & Innovation
- Develop new products for:
- Retail (Kamla outlets)
- Bulk/B2B orders
- RUDI product line expansion
- Improve existing products for quality, cost efficiency, and shelf life
- Support innovation aligned with market demand and scalability
G. Inventory, Cost & Efficiency Management
- Monitor raw material usage, wastage, and yield optimization
- Improve cost efficiency in production systems
- Support implementation of basic inventory control systems
H. Packaging & Transportation Management
- Develop and improve food packaging systems for quality and shelf life
- Ensure safe and efficient food transportation practices
- Standardize packaging for retail and bulk distribution
I. Documentation & Systems Development
- Maintain production records, batch tracking, and quality reports
- Develop and implement SOPs and process manuals
- Align with HR and operational systems being established
3. Required Skills & Competencies
- Strong expertise in:
- Food Processing (Agro + Kitchen + Bakery)
- Food Safety & Quality Control
- Operations & Production Systems
- Experience in multi-unit operations / decentralized systems
- Strong understanding of vendor management and startup environments
- Knowledge of audits, compliance systems, and process controls
- Understanding of packaging and food logistics management
- Ability to work with and train grassroots workforce
- Strong execution, problem-solving, and leadership skills
- Willingness to travel frequently
4. Educational Qualification
- B.Tech / M.Tech in Food Technology / Food Science / Food Processing
- Practical, hands-on experience is highly critical
