Job Description:
We are looking for a skilled and hardworking Commi 1 – Indian & Tandoor to join our kitchen team at Wagholi, Pune The candidate should have hands-on experience in Indian curry preparation, tandoor items, biryani mise-en-place, basic gravies, marination, breads, kebabs, and day-to-day kitchen production.
The ideal candidate should be clean, disciplined, fast during service, and able to maintain consistent taste, portioning, hygiene, and presentation as per brand standards.
Key Responsibilities:
- Prepare Indian curries, gravies, rice items, biryani mise-en-place, kebabs, tandoor snacks, and basic breads.
- Handle tandoor operations including marination, skewering, roasting, and bread preparation.
- Support preparation of biryani base, masalas, rice, fried onions, raita, salan, and accompaniments.
- Maintain proper mise-en-place before service, including cutting, portioning, marination, sauces, and garnishes.
- Follow standard recipes, portion sizes, taste, and presentation guidelines.
- Ensure proper storage of raw materials, semi-prepared items, cooked food, and dry ingredients.
- Maintain hygiene, cleanliness, grooming, and food safety standards at all times.
- Keep the tandoor section, curry section, work station, equipment, refrigerator, and storage area clean and organized.
- Inform the senior chef about low stock, wastage, breakage, or quality issues.
- Support smooth kitchen operations during rush hours, online orders, dine-in service, and bulk orders.
- Follow instructions from the Head Chef / CDP and coordinate with team members during service.
Candidate Requirements:
- Prior experience as Commi 1 / Commi 2 / Indian Cook / Tandoor Cook preferred.
- Must have practical knowledge of Indian and tandoor kitchen operations.
- Experience in biryani, kebabs, curries, gravies, marination, and Indian breads will be preferred.
- Should be able to handle preparation and service pressure in a fast-paced kitchen.
- Must be clean, punctual, disciplined, and team-oriented.
- Willing to work weekends, public holidays, split shifts, and restaurant kitchen timings.
- Candidate should be currently located nearby or willing to travel/relocate as per job requirement.
Qualification:
Minimum 10th / 12th pass.
Hotel management or culinary background will be an added advantage but is not mandatory.
