Chef de Partie (CDP) – Indian Cuisine
Location: Adani Airport Lounge, CSMIA Terminal 2, Mumbai
Job Summary
Semolina Kitchens is seeking an experienced Chef de Partie (CDP) – Indian Cuisine to join our premium Airport Lounge kitchen at Mumbai International Airport (T2). The ideal candidate will be responsible for managing an assigned kitchen section, maintaining the highest standards of food quality, hygiene, and consistency while delivering an exceptional dining experience to lounge guests.
Key Responsibilities
- Prepare and present authentic Indian cuisine, including North Indian, Tandoor, and Curry specialties.
- Independently manage the assigned kitchen section and ensure smooth daily operations.
- Maintain consistency in taste, presentation, and portion control.
- Handle buffet service and live cooking counters as required.
- Ensure mise en place is completed before service.
- Maintain food safety, hygiene, and HACCP standards.
- Monitor inventory, minimize food wastage, and follow FIFO procedures.
- Assist in menu planning, recipe standardization, and new dish development.
- Supervise, train, and mentor Commis Chefs and junior kitchen staff.
- Coordinate with the Executive Chef and Sous Chef to ensure efficient kitchen operations.
Qualifications & Experience
- Diploma or Degree in Hotel Management or Culinary Arts.
- 4–6 years of experience in Indian cuisine within hotels, airport lounges, airline catering, or premium hospitality.
- Strong expertise in Indian curry, tandoor, and regional cuisines.
- Experience in buffet and high-volume kitchen operations.
- Sound knowledge of HACCP, food safety, and hygiene standards.
- Willingness to work rotational shifts, including nights.
