- Team Supervision: Schedule, manage, and supervise kitchen stewards and utility workers. Train team members on chemical handling, equipment safety, and correct dishwashing processes.
- Sanitization & Cleanliness: Ensure all kitchen areas, floors, garbage docks, and walk-in cold rooms are deeply cleaned and sanitized daily according to specific schedules.
- Inventory & Asset Management: Maintain accurate logs of all kitchen inventory, including chinaware, glassware, silverware, and heavy kitchen equipment. Monitor and minimize breakage.
- Chemical & Utility Control: Oversee the proper usage, dilution, and storage of dishwashing detergents and cleaning chemicals. Ensure commercial dishwashing machines are operating at the correct water temperatures and PPM (chemical concentration) levels.
- Waste Management & Pest Control: Coordinate daily wet and dry garbage segregation, timely waste disposal, and work alongside pest control vendors to maintain a pest-free environment.
Key Requirements & Skills
- Experience: 2–4 years in kitchen stewarding within a hotel, luxury resort, or commercial catering environment, with at least 1 year in a supervisory capacity.
- Technical Knowledge: Thorough understanding of food safety protocols, HACCP standards, commercial dishwashing machinery, and chemical safety guidelines (MSDS).
