Key Responsibilities
- Assist the CDP and senior chefs in preparing authentic Kerala dishes.
- Perform basic food preparation and mise-en-place for daily kitchen operations.
- Assist in preparing Kerala vegetarian and non-vegetarian dishes.
- Support the preparation of traditional dishes such as Avial, Thoran, Olan, Kalan, Theeyal, Pachadi, Sambar, Rasam and other Kerala specialities.
- Assist in preparing Kerala Sadya and its various accompaniments.
- Assist in the preparation of Puttu, Appam, Idiyappam, Dosa, Porotta and other traditional Kerala items.
- Assist with preparation of Kerala fish, seafood, chicken and meat dishes under the supervision of the CDP.
- Ensure ingredients are properly cleaned, cut, measured and prepared as per requirements.
- Maintain cleanliness and hygiene of the assigned work area, equipment and utensils.
- Follow food safety and kitchen hygiene standards at all times.
- Store ingredients properly and follow FIFO principles.
- Assist in maintaining proper portion sizes and minimizing food wastage.
- Support the CDP and kitchen team during busy service periods.
- Follow standard recipes and instructions provided by senior chefs.
- Maintain discipline, punctuality and teamwork within the kitchen.
Candidate Profile
- 0–2 years of experience in a hotel, restaurant, resort or commercial kitchen.
- Freshers with a Culinary Arts / Hotel Management qualification may also be considered.
- Basic knowledge of authentic Kerala cuisine is preferred.
- Interest and passion for traditional Kerala food and cooking.
- Basic knowledge of Kerala spices, ingredients and cooking techniques.
- Willingness to learn and work under the guidance of senior chefs.
- Good hygiene and cleanliness practices.
- Ability to work as part of a team and handle a fast-paced kitchen environment.
- Physically fit and willing to work flexible shifts.
