Role Summary
The Executive Chef will own the Bread & Bakery category from concept to commercialization. The role requires deep expertise in bread production, bakery R&D, product innovation, quality management, and consumer trends.
The individual will work closely with Production, Supply Chain, Marketing, Sales, and Quick Commerce teams to develop high-performing products that drive category growth across platforms and modern trade channels.
Key ResponsibilitiesProduct Development & Innovation
- Lead R&D and innovation for the Bread & Bakery category.
- Develop new bread, buns, rolls, artisan breads, healthy breads, and bakery products aligned with consumer trends.
- Create differentiated products focusing on nutrition, convenience, freshness, and taste.
- Conduct recipe development, product trials, shelf-life studies, and commercial validations.
- Benchmark products against market leaders and emerging bakery brands.
Category Ownership & Growth
- Own the growth and performance of the Bread category.
- Identify emerging market opportunities, consumer preferences, and category trends.
- Collaborate with Quick Commerce and Sales teams to drive category expansion and assortment strategy.
- Support new product launches and category-building initiatives.
- Analyze sales performance and consumer feedback to improve product portfolio.
Quality & Manufacturing Excellence
- Establish and maintain quality standards across all bakery products.
- Work closely with manufacturing teams to ensure consistent product quality and process adherence.
- Standardize recipes, production processes, and quality parameters.
- Drive continuous improvements in product texture, freshness, shelf life, and cost efficiency.
- Conduct regular quality audits and troubleshooting.
Consumer & Market Insights
- Stay updated on bakery trends, ingredients, technologies, and health-focused innovations.
- Conduct consumer tastings and product evaluations.
- Gather insights from customers, retail partners, and Quick Commerce platforms.
- Translate market intelligence into actionable product innovations.
Cross-Functional Collaboration
- Partner with Supply Chain, Procurement, Marketing, Operations, and Sales teams.
- Work closely with procurement to identify and qualify new ingredients and vendors.
- Support marketing initiatives through product storytelling and consumer education.
- Train internal teams on product features, category trends, and bakery expertise.
Qualifications
- Degree/Diploma in Bakery & Confectionery, Culinary Arts, Food Technology, Hospitality Management, or related discipline.
- 3–6 years of hands-on experience as a Bakery Chef, Bakery R&D Chef, or Product Development Chef.
- Strong expertise in bread-making, bakery processes, ingredients, fermentation, and quality systems.
- Experience developing commercial bakery products at scale.
- FMCG, Bakery Manufacturing, Cloud Kitchen, QSR, or Food Startup experience preferred.
