You will assist the Executive Chef in managing daily kitchen operations, maintaining the highest standards of food quality and presentation, and ensuring the kitchen meets all financial and safety targets. In the Executive Chef's absence, you will assume full responsibility for the kitchen's success.
Financial & Inventory Management
- Cost Control: Monitor food costs, inventory levels, and kitchen labor expenses to maximize financial performance.
- Procurement: Oversee purchasing and receiving procedures to ensure the quality and freshness of all ingredients.
- Scheduling & Payroll: Manage staff schedules and assist with payroll processing to align with budget and labor laws.
Health, Safety & Sanitation
- Compliance: Maintain strict adherence to local health department rules, food safety standards, and HACCP regulations.
- Kitchen Maintenance: Ensure all kitchen areas, equipment, and utensils are impeccably clean, sanitized, and well-maintained.
Qualifications & Requirements
- Experience: Minimum [Insert, 5-7] years of progressive experience in a professional, high-volume kitchen environment, with at least [Insert,5 -7] years in a culinary supervisory role.
- Education: Culinary Arts Degree or formal culinary training is highly preferred.
- Knowledge: Advanced understanding of culinary techniques, food costs, and kitchen operations.
- Certifications: Current Safe Food Handling / ServSafe Manager certification required (or ability to obtain prior to start).
- Soft Skills: Exceptional organizational, multitasking, and leadership abilities under high-pressure conditions.
