A Salad Chef (also known as a Garde Manger) is a specialized culinary professional responsible for preparing all cold dishes, including fresh salads, grain bowls, dressings, cold appetizers, and garnishes. The role requires excellent food presentation skills, strong hygiene standards, and the ability to maintain freshness and consistency during service hours.
Key Responsibilities
- Prepare and assemble fresh salads, grain bowls, cold appetizers, and related dishes.
- Wash, chop, slice, and portion vegetables, fruits, proteins, and other ingredients.
- Maintain proper mise en place and ensure the cold station is fully stocked before service.
- Prepare in-house dressings, vinaigrettes, dips, sauces, and cold marinades as per recipes.
- Ensure consistency in taste, presentation, and portion sizes.
- Monitor ingredient freshness and follow FIFO (First In, First Out) inventory practices.
- Maintain cleanliness and hygiene standards in accordance with food safety regulations.
- Ensure refrigerators and cold storage areas maintain correct temperatures.
- Coordinate with kitchen staff and supervisors during busy service periods.
- Minimize food wastage and handle ingredients efficiently.
- Follow all company SOPs, kitchen safety standards, and sanitation procedures.
Requirements
- Previous experience as a Salad Chef, Garde Manger, or Cold Kitchen Chef preferred.
- Knowledge of cold kitchen operations, food safety, and hygiene standards.
- Basic understanding of international salads, dressings, and plating techniques.
- Ability to work in a fast-paced kitchen environment.
- Good knife skills and ingredient handling knowledge.
- Team player with positive attitude and discipline.
- Flexibility to work shifts, weekends, and holidays if required.
