Head of Production – Pastry & Bakery

About the Role
We are seeking an experienced and dynamic Head of Production – Pastry & Bakery to lead our large-scale pastry and bakery manufacturing operations. The ideal candidate will have a strong background in 5-star hotels, luxury hospitality brands, premium bakery chains, or high-volume central kitchen operations.
This role requires a hands-on leader with expertise in managing mass production while maintaining exceptional product quality, operational efficiency, food safety standards, and cost control.
Key ResponsibilitiesProduction Operations
- Lead and manage end-to-end pastry and bakery production activities.
- Plan, organize, and execute large-scale production schedules based on business demand.
- Ensure consistent quality, taste, presentation, and product standards across all batches.
- Develop, implement, and monitor SOPs to improve productivity and operational efficiency.
- Optimize production processes, manpower utilization, and workflow management.
Team Management
- Lead, mentor, and develop pastry chefs, bakers, commis chefs, and production staff.
- Conduct regular training programs to enhance team skills and performance.
- Build a high-performing production team while ensuring effective workforce planning.
Quality Assurance & Food Safety
- Ensure strict compliance with HACCP, FSSAI, and food safety regulations.
- Maintain the highest standards of hygiene, sanitation, and workplace safety.
- Conduct quality audits and implement corrective and preventive measures where required.
Inventory & Cost Control
- Monitor raw material consumption and minimize production wastage.
- Coordinate with procurement teams for inventory planning and vendor management.
- Drive food cost optimization without compromising product quality.
- Manage inventory forecasting and production planning effectively.
Product Development & Innovation
- Collaborate with management and culinary teams on new product development.
- Introduce innovative desserts, pastries, cakes, breads, and seasonal offerings.
- Standardize recipes and production procedures to ensure consistency and scalability.
Operational Excellence
- Ensure timely production and dispatch to support business requirements.
- Continuously improve production efficiency and reduce operational bottlenecks.
- Track and report key production metrics and operational performance indicators.
Candidate ProfileExperience
- 8–15+ years of experience in Pastry & Bakery Production.
- Minimum 3–5 years in a senior leadership role such as:
- Executive Pastry Chef
- Head of Production
- Central Kitchen Head
- Bakery Production Manager

Education
- Degree or Diploma in Hotel Management, Culinary Arts, Bakery & Pastry Arts, or a related field.

- Strong operational and commercial understanding of large-scale food manufacturing.
- Ability to lead multi-functional teams and drive operational excellence.
- Experience supporting multi-location operations will be an added advantage.
