A Tandoor Chef specializes in preparing, marinating, and cooking traditional Indian dishes—such as naans, rotis, and kebabs—inside a clay oven (tandoor). Key responsibilities include operating the tandoor at high temperatures, managing marination, ensuring food quality and consistency, and maintaining strict food safety and sanitation standards in a high-pressure environment.
Key Responsibilities
- Tandoor Cooking: Prepare and cook meats (chicken tikka, lamb chops, kebabs) and breads (naan, roti) in the clay oven, ensuring proper texture and smoky flavor.
- Preparation & Marination: Marinate meats, fish, and vegetables using traditional spices and yogurt to ensure flavor and tenderness.
- Oven Maintenance: Properly light, operate, and maintain the tandoor oven, including cleaning and seasoning it for consistent performance.
- Quality Control: Monitor food, taste, and presentation to ensure all dishes meet company standards.
- Inventory Management: Manage, monitor, and order inventory of ingredients like spices, meats, and dough, minimizing waste.
- Safety & Hygiene: Adhere to food safety, HACCP, and hygiene regulations, ensuring a clean working area.
Qualifications
- Experience: Proven experience as a Tandoor Specialist or in an Indian kitchen setting.
- Technical Skills: Expert knowledge of tandoor cooking techniques, marination, and Indian cuisine.
- Efficiency: Ability to work efficiently in a fast-paced, high-heat environment.
- Teamwork: Ability to work well with other kitchen staff to manage time and food preparation
Pay: ₹12,000.00 - ₹18,000.00 per month
