We are looking for a passionate Sous Chef who can lead kitchen operations, maintain exceptional quality, and help us innovate healthier versions of traditional Kerala cuisine.

Key Responsibilities
Kitchen Operations
* Assist the Head Chef in managing day-to-day kitchen operations.
* Supervise kitchen staff and delegate daily responsibilities.
* Ensure all meals are prepared according to FITORA’s recipes and nutritional standards.
* Maintain consistency in taste, presentation, and portion sizes.
* Ensure timely preparation and dispatch of customer orders.
Healthy Food Preparation
* Prepare healthy Kerala breakfast, lunch, dinner, snacks, and beverages.
* Execute dietitian-approved recipes accurately.
* Develop healthier cooking methods while preserving authentic flavours.
* Minimize oil, refined ingredients, and unnecessary additives without compromising taste.
Team Leadership
* Train and mentor Assistant Chefs and Kitchen Assistants.
* Monitor staff performance and maintain kitchen discipline.
* Coordinate with the Operations Manager for production planning.
* Ensure effective communication between kitchen and delivery teams.
Food Safety & Hygiene
* Maintain strict hygiene and sanitation standards.
* Ensure compliance with FSSAI regulations.
* Monitor food temperatures, storage, and inventory rotation (FIFO).
* Reduce food wastage through efficient planning.
Inventory & Cost Control
* Assist in daily inventory management.
* Monitor ingredient quality and stock levels.
* Report purchasing requirements.
* Help control food costs while maintaining premium quality.
Menu Development
* Contribute ideas for new healthy menu items.
* Assist in seasonal menu planning.
* Work closely with the Dietitian to improve nutritional profiles.
* Standardize recipes for consistency.

Preferred Qualifications
* Minimum 3–5 years of experience in a professional kitchen.
* Experience as a Sous Chef, Senior CDP, or Chef de Partie.
* Strong knowledge of Kerala cuisine.
* Experience in healthy food, wellness kitchens, cloud kitchens, or meal prep services is highly preferred.
* Good leadership and organizational skills.
* Ability to perform under pressure and meet production deadlines.

Candidates with any of the following will receive preference:
* Certification in Nutrition or Sports Nutrition
* Experience working with a nutrition-focused restaurant or healthy food brand
* Knowledge of macro-balanced meal preparation
* Experience preparing meals for weight management, muscle gain, diabetic, or therapeutic diets
* Knowledge of food costing and production planning
