We are looking for a skilled and creative South Indian Cook who can independently manage kitchen operations and prepare both traditional and fusion South Indian dishes while maintaining consistency, hygiene, and presentation standards.
Food Preparation
- Prepare dosa batter, idli batter, vada batter, chutneys, sambhar, rasam, and other South Indian bases from scratch.
- Prepare fusion menu items according to standardized recipes.
- Ensure consistency in taste, texture, portion size, and plating.
- Handle breakfast, snack, and café-style menu operations.
Specialized Skills Required
Must be able to prepare:
- Plain, Masala, Ghee Roast, Cheese, and Fusion Dosas
- Idli varieties and Mini Idli dishes
- Kuzhi Paniyaram
- Vada and Medu Vada
- South Indian chutneys and podi blends
- Filter Coffee and specialty beverages
- Fusion snacks and café-style plating
Kitchen Operations
- Manage inventory and daily stock requirements.
- Minimize food wastage and maintain food cost targets.
- Ensure proper storage of ingredients.
- Maintain kitchen cleanliness and hygiene standards.
- Follow food safety regulations.
Recipe Management
- Strictly follow recipe cards provided by management.
- Standardize preparation methods to ensure identical taste every day.
- Assist in developing new menu items when required.
Candidate Requirements
- 3+ years of experience in a South Indian restaurant, café, or cloud kitchen.
- Strong knowledge of dosa batter fermentation and South Indian cooking techniques.
- Experience handling high customer volume.
- Knowledge of food costing and inventory management.
- Ability to train junior kitchen staff.
- Basic understanding of fusion food concepts.
Preferred Skills
- Experience with café-style presentation.
- Experience using commercial dosa tawa, fryer, and kitchen equipment.
- Ability to innovate and suggest new menu ideas.
Salary Range (Mumbai)
- Experienced South Indian Cook: ₹20,000-₹35,000/month
Pay: ₹18,000.00 - ₹30,489.32 per month
