Role Overview
The Head Chef at Chai Govindam is a senior leadership role responsible for the complete management of kitchen operations across all outlets. The ideal candidate will bring creativity, discipline, and culinary excellence to deliver consistent food quality while managing costs, teams, and hygiene standards at a QSR scale.
Key Responsibilities
Kitchen Operations & Food Quality
- Plan, prepare, and oversee cooking of all menu items ensuring consistent taste and quality across all outlets
- Develop and standardize recipes, portion sizes, and presentation norms
- Maintain high standards of food quality, freshness, and timely service
- Conduct regular taste tests and quality audits across kitchen stations
Team Management
- Lead, train, and supervise kitchen staff including Sous Chefs, Line Cooks, and Kitchen Helpers
- Create and manage shift schedules to ensure adequate staffing at all times
- Conduct regular performance reviews and on-the-job training sessions
- Foster a culture of discipline, teamwork, and professionalism in the kitchen
Menu Development
- Design seasonal menus, special items, and limited-time offers in line with brand identity
- Research food trends and introduce innovations without compromising brand standards
- Collaborate with management for new outlet launches and menu expansions
Cost & Inventory Management
- Monitor food cost, control wastage, and maintain kitchen budget targets
- Oversee procurement, inventory management, and vendor coordination
- Ensure proper stock rotation (FIFO) and minimize raw material wastage
Hygiene, Safety & Compliance
- Ensure strict compliance with FSSAI food safety regulations and hygiene standards
- Maintain cleanliness of kitchen, equipment, and storage areas at all times
- Implement and enforce HACCP principles and safe food handling practices
- Ensure regular pest control, equipment maintenance, and safety checks
Qualifications & Requirements
Education
- Diploma or Degree in Hotel Management / Culinary Arts from a recognized institute
- Additional certifications in Food Safety (FSSAI / HACCP) preferred
Experience
- Minimum 10 years of culinary experience, with at least 3–4 years in a Head Chef or Senior Chef role
- Prior experience in QSR, casual dining, or multi-outlet food brand strongly preferred
- Proven track record of managing kitchen teams of 10+ staff
Skills & Competencies
- Strong knowledge of Indian cuisine and regional flavors; knowledge of snack/chai accompaniments is a plus
- Excellent leadership and people management skills
- Strong understanding of food costing, portion control, and kitchen financials
- Ability to work under pressure and manage high-volume service periods
- Good communication skills in Hindi; English is an advantage
Compensation & Benefits
- Salary: ₹40,000 – ₹1,00,000 per month (based on experience and interview performance)
