Role Overview
We are seeking an experienced and highly skilled Head Baker / Senior Pastry Chef to lead our artisan bakery and pastry program. The ideal candidate will have strong expertise in sourdough fermentation, high-hydration breads, premium pastries, and modern dessert development.
Key Responsibilities
Bread & Fermentation
- Lead daily production of sourdough breads and fermented doughs.
- Manage starter health, fermentation cycles, hydration levels, and quality consistency.
- Produce artisan breads including:
- Sourdough
- Focaccia
- Ciabatta
- Burger Buns
- Sandwich Loaves
- Seasonal Specialty Breads
- Develop innovative bakery products using advanced fermentation techniques.
Pastry & Dessert Production
- Prepare and oversee premium cakes, pastries, and desserts.
- Produce specialty items such as Honey Cakes, Sponge Cakes, Ganache-Based Desserts, and Flourless Cakes.
- Develop unique flavor profiles using ingredients such as matcha, botanicals, teas, and specialty infusions.
- Ensure consistency in taste, texture, and presentation.
Operations & Inventory
- Scale recipes accurately for commercial production.
- Manage inventory, ingredient sourcing, and stock control.
- Ensure food safety, hygiene, and kitchen standards are maintained.
- Plan production schedules to ensure fresh products are available daily.
- Lead bakery operations during early morning production shifts.
Required Skills & Experience
- 5–8 years of experience in a premium bakery, artisan bakery, luxury hotel, or specialty café.
- Strong expertise in:
- Sourdough fermentation
- Baker’s percentages
- Dough hydration management
- Artisan bread production
- Proven experience with:
- Sourdough, Focaccia, and Ciabatta
- Brioche and Burger Buns
- Sandwich Loaves and Specialty Breads
- Layered Cakes and Pastry Desserts
- Strong product development and recipe creation skills.
- Ability to work independently and manage a bakery team.
- Knowledge of ingredient behavior and bakery operations in varying climatic conditions is preferred.
Preferred Background
Candidates from luxury hotels, premium bakeries, artisan bakeries, specialty cafés, or international bakery brands are highly preferred.

Pay: ₹70,000.00 - ₹105,000.00 per month
