Manager / Assistant Manager — Quality Control & Quality Assurance

1. Job Summary
Own product quality, food safety, regulatory and export compliance, and customer specification adherence across the value chain — from raw-material procurement through processing, milling, packaging, storage, and dispatch. The role covers Basmati Rice quality parameters, lab testing, quality systems, export requirements, third-party/customer audits, CAPA, and continuous improvement, working closely with Procurement, Production, Milling, Packaging, Warehouse, Export, and Commercial teams.
2. Key ResponsibilitiesA. Quality Control — Raw Material, Process & Finished Product
- Monitor and control quality across procurement, inward receipt, processing, milling, packaging, storage, and dispatch.
- Sample and inspect raw paddy, raw rice, semi-finished and finished rice, packaging materials, and export consignments; conduct physical, chemical, sensory, and applicable microbiological analysis.
- Verify compliance against internal, customer, statutory, and export specifications.
- Manage segregation, identification, quarantine, release, rejection, and disposition of non-conforming material; act on process deviations promptly.
3. Basmati Rice Quality Parameters
Monitor and document: grain length, breadth, and L/B ratio; broken %, head rice % / recovery; moisture, foreign matter, paddy admixture; chalky, damaged/discoloured, immature, and red grains and other defects; milling yield and recovery; purity and varietal integrity; aroma, colour, appearance, uniformity, cleanliness; cooking characteristics and elongation; and other customer/destination-country specifications.
4. Export Quality, Compliance, Audits & InspectionExport Quality Requirements
- Track country-specific import requirements for served markets; ensure compliance with customer/export specs for physical, chemical, and microbiological parameters, pesticide/residue, heavy metals, mycotoxins/aflatoxins, food safety, packaging/labelling, and shelf-life/storage.
- Ensure adherence to FSSAI, Codex, importing-country regulations, and customer/statutory standards.
- Maintain approved specifications per export customer/market and align them with purchase orders and contracts, coordinating with Export/Commercial before production and dispatch.
Export Inspection & Pre-Shipment Inspection
- Coordinate pre-shipment inspection with customers, third-party agencies, surveyors, certifiers, and labs, per applicable protocols.
- Prepare export and retention samples; verify inspection reports and resolve deviations before shipment; ensure external lab testing and final quality clearance for dispatch.
- Ensure timely, accurate COA, test/inspection reports, declarations, and other export documents; investigate and resolve inspection failures or rejections.
Export Audits & Customer Audits
- Coordinate and participate in customer, food safety, certification, buyer, regulatory, surveillance, and supplier/compliance audits.
- Prepare the plant, lab, documentation, and personnel for scheduled and surprise audits; ensure timely closure of observations.
- Prepare and track CAPA against audit findings to verified closure; maintain an audit calendar and address recurring observations with preventive controls.
5. Laboratory & Quality Equipment Management
- Operate, maintain, calibrate, and document QC lab equipment: moisture meter/analyzer, rice grain analyzer, grain length & breadth equipment, rice grader, weighing/analytical balances, sieve/grain-size equipment, dehuller/lab rice sheller, lab or mini rice mill, milling and head-rice-recovery/yield analysis equipment, kernel dimension/image analysis, colour measurement system, chalky-grain/defect analyzer, and hot air oven (reference-method moisture).
- Coordinate pesticide/residue and other specialised testing through approved external laboratories.
- Ensure calibration/verification per schedule; maintain certificates, history, and maintenance records; restrict use to trained personnel.
- Set testing methods and acceptance criteria; investigate abnormal results; maintain reference standards where applicable.
- Coordinate servicing/breakdown resolution, lab housekeeping/5S/safety, and evaluate new equipment needs.
6. Quality Assurance & Food Safety Systems
- Develop, implement, and maintain QA procedures, SOPs, work instructions, and quality manuals.
- Implement and monitor HACCP, GMP, GHP, ISO 22000, BRCGS, FSSAI, customer-specific systems, and export-market requirements.
- Monitor hygiene, sanitation, pest control, environmental controls, and food safety practices; conduct internal quality/hygiene/warehouse audits and close findings.
- Maintain quality, food safety, traceability, testing, inspection, and compliance documentation.
7. Customer Complaints, NCR & CAPA
- Investigate complaints on grain quality, appearance, aroma, moisture, broken %, packaging, foreign matter, pest infestation, cooking quality, chemical/microbiological parameters, and other concerns.
- Conduct Root Cause Analysis, raise NCRs, and implement effective CAPA; track closure, verify effectiveness, and control repeat complaints.
8. Cross-Functional Coordination
- Procurement — raw-material specs and supplier quality; Production/Milling — process quality and deviations; Packaging — material and packing-quality requirements.
- Warehouse — storage hygiene, pest control, FIFO/FEFO, and preservation; Export/Commercial — customer specs, inspections, and shipment clearance; external labs and inspection agencies as needed.
- Act as quality gatekeeper for raw-material, process, and finished-product release.
9. Training & Team Management
- Lead and supervise QC/QA personnel and ensure adequate coverage across shifts.
- Train staff on product specifications, sampling/testing, GMP/GHP, food safety, hygiene, SOPs, export requirements, and customer specifications.
- Maintain training records and evaluate effectiveness.
10. Required Qualification
B.Tech/B.Sc. / M.Sc. in Food Technology, Food Science, Agriculture, related field. Certification in HACCP, Food Safety, ISO 22000, BRCGS, Quality Management, or Internal Auditor is an advantage.
11. Experience
2–5+ years in Quality Control/Assurance, preferably in Rice, Basmati Rice, Grain Processing, Flour Mills, Food Processing, FMCG, or Agricultural Commodities, ideally with an export-oriented organization. Experience with customer, certification, regulatory, and third-party audits, and exposure to export inspections and international customer specifications, is strongly preferred.

- Laboratory equipment and calibration; quality documentation and reporting; supplier quality management
13. Preferred Candidate Profile
A hands-on Quality professional with strong Basmati Rice / Rice Processing / Food Manufacturing experience, able to run both plant-level QC and QA systems — with practical exposure to rice quality analysis, lab equipment, milling parameters, export specs, pre-shipment inspections, audits, CAPA, food safety systems, and team management. Independent and uncompromising on quality, food safety, and compliance, while working collaboratively with operations and commercial teams.
Pay: ₹1,000,000.00 - ₹1,400,000.00 per year
