Role Overview
The Commis 1 is a senior-level junior kitchen role, working closely with the Chef de Partie to run a section of the kitchen with minimal supervision. This role is ideal for someone with solid hands-on cooking/baking experience who is ready to take more ownership, mentor newer team members, and progress toward a Chef de Partie position.
Key Responsibilities
- Independently prepare and execute dishes/products within your assigned section, following recipes and standards consistently
- Support the Chef de Partie in planning and organizing daily prep and production schedules
- Set up and break down your station (mise en place) efficiently before and after service
- Monitor food quality, portioning, and presentation to ensure consistency across every order
- Operate kitchen equipment safely and correctly (ovens, grills, mixers, fryers, etc.)
- Guide and support Commis 2 and kitchen trainees, demonstrating proper technique and standards
- Ensure strict adherence to food safety, hygiene, and sanitation standards (HACCP compliance)
- Manage stock rotation (FIFO), minimize waste, and flag shortages to the Chef de Partie in advance
- Communicate clearly with the kitchen team and front-of-house staff regarding order timing and special requests
- Assist with inventory counts, receiving deliveries, and proper storage of ingredients
- Maintain a clean, organized, and safe workstation at all times
- Step in to cover other sections as needed during peak periods or staff shortages
Requirements
- 2+ years of experience in a professional kitchen, cafe, or bakery environment
- Solid grasp of cooking/baking fundamentals and knife/equipment skills
- Ability to work with minimal supervision and take initiative
- Strong understanding of food safety and hygiene practices
- Good communication skills and ability to guide junior team members
- Ability to work efficiently under pressure during busy service periods
- Flexibility to work early mornings, evenings, weekends, and holidays as required
- Physically able to stand for extended periods and lift moderate weights
Nice to Have
- Culinary/pastry certification or diploma
- Experience with [specific specialty, e.g., breakfast service, bread production, cafe-style plating]
- Basic knowledge of menu costing or portion control
Pay: ₹18,000.00 - ₹23,000.00 per month
