Commis 1 — Senior Commis
- Independently manage day-to-day mise en place and cooking for the assigned continental section.
- Prepare and execute continental dishes according to standard recipes and presentation guidelines.
- Assist the Chef de Partie in coordinating service and section operations.
- Supervise and train Commis 2 and Commis 3 on preparation and basic cooking techniques.
- Ensure correct portioning, plating, quality, and timely dispatch of dishes.
- Monitor stock levels and communicate requisition requirements.
- Minimize wastage and maintain proper food storage and labeling.
- Ensure strict compliance with hygiene, HACCP, safety, and sanitation standards.
- Take responsibility for cleanliness and readiness of the assigned section.
Typical experience: 2–3+ years.
Commis 2 — Intermediate
- Handle mise en place and basic cooking for assigned continental sections.
- Prepare sauces, stocks, soups, salads, pasta, vegetables, and basic continental dishes.
- Maintain consistent taste, presentation, portion size, and quality.
- Assist Commis 1 and guide Commis 3 on routine tasks.
- Check ingredients for freshness and report shortages.
- Follow standard recipes, food-cost controls, and wastage procedures.
- Maintain section hygiene and ensure equipment is properly handled.
- Support the Chef de Partie during preparation and service.
Typical experience: 1–2 years.
Commis 3 — Entry Level
- Assist in basic food preparation: washing, peeling, cutting, portioning.
- Follow recipes, portion standards, and chef instructions.
- Maintain cleanliness of workstations, equipment, and storage areas.
- Assist senior kitchen staff during mise en place and service.
- Store ingredients correctly and follow FIFO.
- Follow food safety, hygiene, and sanitation standards.
- Support dishwashing/cleaning when required.
- Learn basic continental cooking techniques and kitchen procedures.
Typical experience: 0–1 year / fresher.
Pay: ₹15,000.00 - ₹24,000.00 per month
