Role Overview
The Commis II – Tandoor is responsible for assisting in the preparation and cooking of tandoor dishes while maintaining quality, hygiene, and kitchen standards. The role supports senior chefs in handling the tandoor section and ensures efficient kitchen operations.
Key Responsibilities
Food Preparation & Cooking
- Assist in the preparation and cooking of tandoor items such as rotis, naans, kebabs, and grilled dishes.
- Perform tasks like marination, skewering, and dough preparation.
- Ensure proper use and temperature control of the tandoor oven.
- Maintain consistency in taste, texture, and presentation of dishes.
Kitchen Operations
- Support the Chef de Partie in managing the tandoor section.
- Ensure proper mise en place is maintained before service.
- Follow instructions from senior chefs for smooth operations during service hours.
Hygiene & Safety
- Maintain high standards of cleanliness, hygiene, and food safety.
- Ensure safe handling of tandoor equipment and fire safety practices.
- Follow proper food storage and FIFO practices.
Inventory & Coordination
- Assist in stock management and ingredient storage for the tandoor section.
- Report shortages, damages, or spoilage to senior chefs.
- Coordinate with kitchen team members for smooth operations.
Qualifications & Requirements
- Diploma / Degree in Hotel Management or Culinary Arts.
- 1–3 years of experience in tandoor section or Indian kitchen.
- Basic knowledge of tandoor cooking techniques.
- Ability to work in a fast-paced kitchen environment.
- Flexible to work in shifts, weekends, and holidays.
Job Types: Full-time, Permanent
Pay: ₹20,000.00 - ₹22,000.00 per month
