Job Summary:
The Seafood Processing Technologist is responsible for ensuring the quality, safety, and compliance of seafood products through laboratory testing, production inspection, and technical support. The role involves monitoring processing operations, conducting analytical and microbiological tests, performing in-plant quality inspections, and assisting in continuous improvement initiatives to meet customer and regulatory requirements.
Key Responsibilities:1. Laboratory & Technical Analysis
- Conduct physical, chemical, and microbiological analyses of seafood raw materials, in-process samples, and finished products.
- Maintain calibration and performance of laboratory instruments and equipment.
- Prepare and maintain accurate laboratory records, test results, and certificates of analysis.
- Support research and development trials for new products or processing methods.
2. Production Quality Assurance & Inspection
- Conduct routine inspections of processing areas, equipment, and personnel to ensure compliance with hygiene, sanitation, and GMP requirements.
- Monitor critical control points (CCPs) and verify compliance with HACCP plans.
- Check product specifications—such as weight, texture, appearance, glazing, packaging, and labeling—during production runs.
- Identify deviations or non-conformities and recommend corrective and preventive actions (CAPA).
- Work closely with production supervisors to address quality or process issues in real time.
3. Process & Technical Support
- Monitor processing parameters (temperature, salinity, time, yield, etc.) to maintain consistent product quality and efficiency.
- Assist with validation and optimization of processing methods and new technologies.
- Support implementation of continuous improvement initiatives in yield, quality, and sustainability.
4. Food Safety & Compliance
- Ensure compliance with HACCP, BRC etc
- Participate in internal and external audits and maintain all relevant QA documentation.
- Support environmental monitoring and sanitation verification programs.
5. Reporting & Communication
- Compile technical and quality reports for management and customers.
- Communicate inspection findings and test results promptly to relevant departments.
- Support staff training on hygiene, quality control, and food safety best practices.
Qualifications:
- Bachelor’s or Masters degree in Food Technology, Fisheries Science, Food Chemistry, Microbiology, or related field.
- Approved technologist by EIA with minimum 3 years experience in seafood
- Experience in seafood or food processing with both laboratory and production QA exposure.
- Knowledge of Microbiology, HACCP, BRC, GMP, and food safety management systems.
- Familiarity with analytical testing methods, sensory evaluation, and seafood product characteristics.
