The Tandoori / Shawarma & Grill Master is responsible for preparing and cooking high-quality tandoori, shawarma, kebabs, grilled meats, breads, and related menu items while maintaining consistency, food safety, and hygiene standards. The role requires expertise in marination, grilling techniques, and operating tandoor ovens and shawarma machines efficiently during service.
Key Responsibilities
- Prepare and marinate chicken, mutton, beef (where applicable), seafood, and vegetables according to standard recipes.
- Prepare shawarma meat stacks, monitor roasting, and carve meat efficiently during service.
- Cook tandoori dishes including:
- Tandoori Chicken
- Chicken Tikka
- Malai Tikka
- Seekh Kebab
- Paneer Tikka
- Fish Tikka
- Grilled Vegetables
- Prepare tandoor breads such as:
- Naan
- Butter Naan
- Garlic Naan
- Tandoori Roti
- Kulcha
- Operate and maintain:
- Tandoor oven
- Shawarma grill/rotisserie
- Charcoal or gas grill
- Ensure proper cooking temperatures, timing, and food presentation.
- Monitor stock levels for meats, marinades, spices, breads, charcoal/gas, and other ingredients.
- Follow portion control to minimize food wastage.
- Maintain cleanliness of grills, tandoor, knives, skewers, and workstations.
- Ensure compliance with food safety, hygiene, and sanitation standards.
- Coordinate with kitchen staff for smooth service during peak hours.
- Assist in developing new grilled and tandoori menu items.
Required Skills
- Strong knowledge of tandoor cooking techniques.
- Expertise in shawarma preparation and carving.
- Experience with charcoal and gas grilling.
- Excellent marination and spice-balancing skills.
- Ability to prepare both vegetarian and non-vegetarian dishes.
- Knowledge of food safety and hygiene practices.
- Ability to work under pressure in a fast-paced kitchen.
- Good communication and teamwork skills.
Qualifications
- High school diploma or equivalent (preferred).
- Culinary certification is an advantage.
- Food Safety/HACCP certification is preferred.
Experience
- Minimum 3–5 years of experience as a Tandoori Chef, Shawarma Master, or Grill Chef.
- Experience in restaurants, hotels, cafés, or cloud kitchens.
- Ability to independently manage the grill/tandoor section during service.
Physical Requirements
- Ability to stand for long hours.
- Comfortable working in high-temperature kitchen environments.
- Ability to lift up to 25 kg when required.
