The Production and Shift Incharge supervises daily food manufacturing operations during an assigned shift. This role focuses on meeting daily production targets, maintaining high quality standards, minimizing food waste, and enforcing strict sanitation guidelines.
Key Responsibilities
1. Shift Operations & Productivity
- Target Achievement: Meet the shift’s production volume targets according to the daily manufacturing plan.
- Manpower Handling: Allocate 10–20 operators and casual laborers to processing or packaging lines.
- Material Tracking: Monitor raw materials, ingredients, and packaging supplies to prevent line stoppages.
- Shift Handover: Complete accurate shift logs detailing output, raw material usage, and pending issues.
2. Food Safety & Quality Control
- PRP Compliance: Enforce daily Prerequisite Programs (PRPs), personal hygiene rules, and uniform policies.
- CCP Monitoring: Oversee Critical Control Points (CCPs) like metal detection, pasteurisation, or baking temperatures.
- Defect Control: Inspect batches for consistency, taste, texture, and weight, rejecting any non-conforming items.
- Traceability: Maintain batch records to ensure full raw-material-to-finished-good traceability.
3. Hygiene, Sanitation & Safety
- Cleaning Schedules: Supervise Cleaning-In-Place (CIP) and Sanitation Standard Operating Procedures (SSOPs).
- Safety Audits: Monitor the shop floor for chemical hazards, wet floor slips, and machinery safety guards.
4. Equipment Maintenance
- Basic Troubleshooting: Resolve minor mechanical or packaging line glitches immediately.
- Breakdown Reporting: Log major machinery breakdowns with the engineering team to reduce downtime.
Required Skills & Qualifications
- Education: Bachelor’s degree or Diploma in Food Technology, Food Engineering, Dairy Technology, or Biotechnology.
- Experience: 1 to 2 years of shop-floor experience in a food, beverage, or FMCG manufacturing plant.
- Certifications: Basic understanding or certification in HACCP, ISO 22000, or FSSC 22000 standards.
- Technical Skills: Familiarity with MS Excel or ERP software (like SAP) for logging daily production numbers.
- Soft Skills: Strong communication skills to manage floor workers and quick decision-making under pressure.
Pay: ₹18,000.00 - ₹25,000.00 per month
