Production Executive – Potato Flakes Unit

Job Summary:
The Production Executive is responsible for managing daily production activities in the Potato Flakes Manufacturing Unit, ensuring achievement of production targets while maintaining product quality, food safety, operational efficiency, and compliance with company standards. The role involves supervising production manpower, monitoring process parameters, minimizing wastage, and ensuring smooth plant operations.
Key Responsibilities:
1. Production Operations
- Supervise day-to-day production activities in the potato flakes processing line.
- Ensure production targets are achieved as per production plan.
- Monitor all stages of potato processing including washing, peeling, trimming, slicing, cooking, drying, flaking, and packing.
- Ensure optimum utilization of manpower, machinery, and raw materials.
2. Process Monitoring & Control
- Monitor critical process parameters such as temperature, moisture content, cooking time, drying conditions, and flake quality.
- Ensure adherence to standard operating procedures (SOPs).
- Identify and resolve process deviations to maintain product consistency.
3. Quality & Food Safety Compliance
- Ensure compliance with GMP, GHP, HACCP, FSSAI, BRCGS, and ISO 22000 requirements.
- Coordinate with the Quality Assurance team for product quality checks.
- Ensure food safety and hygiene practices are followed on the shop floor.
- Maintain proper production records and traceability documentation.
4. Team Management
- Supervise operators, technicians, helpers, and contract labor.
- Allocate manpower according to production requirements.
- Conduct shift briefings and monitor workforce performance.
- Ensure discipline and adherence to company policies.
5. Equipment & Maintenance Coordination
- Monitor machine performance and equipment efficiency.
- Coordinate with the Maintenance Department for preventive and breakdown maintenance.
- Minimize downtime and ensure smooth plant operation.
6. Inventory & Material Management
- Monitor raw potato consumption and yield.
- Control wastage and improve recovery percentage.
- Coordinate with Stores for raw materials, packaging materials, and consumables.
- Maintain production and inventory records accurately.
7. Housekeeping & 5S Implementation
- Ensure proper housekeeping and sanitation standards in production areas.
- Implement and maintain 5S practices.
- Ensure proper waste segregation and disposal practices.
- Maintain cleanliness as per food industry requirements.
8. Safety Compliance
- Ensure compliance with plant safety standards and procedures.
- Promote safe work practices and proper PPE usage.
- Report unsafe conditions and participate in incident investigations.
- Conduct safety observations and toolbox talks.
9. Documentation & Reporting
- Prepare Daily Production Reports (DPR).
- Maintain production logs, downtime records, wastage reports, and shift reports.
- Submit daily, weekly, and monthly production data to management.
10. Continuous Improvement
- Participate in productivity improvement initiatives.
- Suggest process improvements to reduce costs and increase efficiency.
- Support Kaizen, Lean Manufacturing, and operational excellence projects.
Required Skills & Competencies
- Knowledge of potato processing and dehydration technology.
- Understanding of food manufacturing processes and quality systems.
- Strong leadership and manpower management skills.
- Knowledge of GMP, HACCP, FSSAI, BRCGS, and ISO standards.
- Good problem-solving and analytical abilities.
- Proficiency in MS Excel and production reporting.
Educational Qualification
- B.Tech / B.E. in Food Technology, Food Engineering, Mechanical Engineering, Production Engineering, or related field.
- Diploma holders with relevant experience may also be considered.
Experience
- Minimum 2 years of experience in food manufacturing, preferably in potato flakes, dehydrated vegetables, snack foods, frozen foods, or potato processing industries.
Preferred Experience
- Experience in potato flakes manufacturing plants.
- Knowledge of drum dryers, steam cooking systems, peeling systems, and automated packaging lines.
- Exposure to food safety audits and customer audits.
Experience Required: Minimum 2 Years
Industry Preferred: Potato Flakes, Dehydrated Vegetables, Food Processing, Frozen Foods, FMCG Manufacturing.
