We are seeking a passionate, skilled, and experienced Chinese Chef to lead our kitchen team and deliver exceptional, authentic Chinese cuisine. In this role, you will be responsible for menu engineering, recipe development, and overseeing daily kitchen operations. The ideal candidate possesses deep knowledge of traditional Chinese culinary arts—including wok cooking (wok hei), dim sum preparation, and regional flavor profiles—while ensuring strict food safety, portion control, and high-quality standards.
Key Responsibilities
- Culinary Excellence & Production: Prepare, cook, and present high-quality Chinese dishes according to established recipes and presentation standards. Master various techniques including stir-frying, steaming, braising, roasting, and deep-frying.
- Menu Development: Design and innovate menus featuring authentic regional Chinese cuisines (e.g., Cantonese, Sichuan, Mandarin) as well as contemporary fusions, keeping up with market trends and seasonal ingredients.
- Wok Mastery: Demonstrate exceptional skill in managing high-temperature wok stations, ensuring proper execution of flavors and textures.
- Kitchen Management: Supervise, train, and mentor line cooks and kitchen assistants. Schedule kitchen staff and manage prep lines to ensure smooth service during peak hours.
- Inventory & Cost Control: Monitor food stock levels, order ingredients from approved vendors, and minimize food waste to maintain optimal food cost percentages.
- Sanitation & Safety: Maintain impeccable hygiene standards across all kitchen sections. Ensure full compliance with local health department regulations, food safety policies, and HACCP guidelines.
Required Skills & Qualifications
- Experience: Minimum of 3–5 years of professional culinary experience specializing in Chinese cuisine, preferably in a high-volume restaurant or luxury hotel setting.
- Technical Expertise: Confident handling of traditional Chinese kitchen equipment (woks, steamers, specialized cleavers). Deep understanding of essential ingredients, spices, marinades, and stock preparation.
- Leadership: Strong team management and communication skills, with the ability to keep a kitchen crew calm and efficient under high pressure.
- Precision: Excellent knife skills and meticulous attention to detail regarding portion control, plating aesthetics, and consistency.
- Certification: Valid food handler’s card or food safety management certification (e.g., ServSafe).
- Flexibility: Ability to work split shifts, weekends, and holidays as required by the business.
