Position: Commis I – Chinese Cuisine

Reporting To: CDP / Sous Chef / Executive Chef

Job Purpose
To support the Chinese Kitchen team in preparing high-quality Chinese dishes while maintaining food quality, hygiene, safety, and standard kitchen procedures.
Key Responsibilities
- Prepare and cook Chinese dishes as per standard recipes and presentation guidelines.
- Assist the CDP/Sous Chef in daily kitchen operations and food preparation.
- Handle mise-en-place including cutting, chopping, marination, sauces, stocks, and other preparations.
- Prepare Chinese items such as noodles, fried rice, Manchurian, stir-fried vegetables, soups, gravies, and other Chinese preparations.
- Ensure proper portioning, taste, consistency, and presentation of food.
- Follow standard recipes, cooking methods, and food production procedures.
- Maintain proper food storage, labelling, FIFO/FEFO, and temperature control.
- Ensure cleanliness and hygiene of workstations, utensils, equipment, and kitchen areas.
- Follow FSSAI food safety and hygiene standards and company SOPs.
- Check the quality and freshness of ingredients before use and report any issues to the senior chef.
- Minimize food wastage and maintain proper control of raw materials.
- Support inventory checks and communicate shortages or requirements to the senior chef.
- Follow personal hygiene, grooming, and kitchen safety standards.
- Coordinate with other kitchen sections to ensure smooth and timely food production.
- Maintain proper cleaning and sanitization schedules for the assigned work area.
- Perform any other kitchen-related duties assigned by the CDP, Sous Chef, or Executive Chef.
Required Skills & Qualifications
- ITI / Diploma / Certificate in Hotel Management or Culinary Arts preferred.
- 1–3 years of experience in Chinese cuisine, preferably in a hotel, restaurant, catering, or institutional kitchen.
- Good knowledge of basic Chinese cooking techniques and ingredients.
- Knowledge of wok cooking, sauces, noodles, fried rice, soups, and Chinese gravies.
- Basic knowledge of food safety, hygiene, and kitchen sanitation.
- Ability to work efficiently in a fast-paced kitchen environment.
- Good teamwork, discipline, and willingness to learn.

Pay: ₹16,000.00 - ₹20,000.00 per month
