Position Summary
The Kitchen Operations Manager is responsible for overseeing complete operational management of centralized kitchens, including food production, stores, procurement coordination, inventory control, food dispatch, logistics, staff supervision, and Anna Canteen performance management within the assigned kitchen’s service region.
This role ensures uninterrupted, hygienic, and efficient meal production and distribution while maintaining organizational quality standards, cost control, and service excellence.
Core Job Responsibilities1. Centralized Kitchen Operations Management
- Supervise day-to-day functioning of the assigned centralized kitchen.
- Ensure timely production of meals according to planned schedules.
- Monitor food preparation quality, quantity, hygiene, and compliance with SOPs.
- Ensure adherence to FSSAI, hygiene, and safety standards.
- Coordinate kitchen staff deployment for smooth operational flow.
- Monitor kitchen equipment functionality and maintenance.
2. Store & Inventory Management
- Oversee receipt, storage, and issuance of all raw materials.
- Maintain accurate inventory records for:
- Rice
- Vegetables
- Groceries
- Oils
- Packaging materials
- Cleaning supplies
- Ensure stock availability for uninterrupted operations.
- Conduct physical stock verification and audits.
- Implement FIFO/FEFO inventory systems.
- Reduce wastage, pilferage, and stock losses.
3. Food Distribution & Dispatch Operations
- Manage daily dispatch of prepared meals to all allocated Anna Canteens.
- Ensure timely and route-efficient food transportation.
- Supervise dispatch teams, drivers, and logistics schedules.
- Monitor food temperature, packaging quality, and delivery standards.
- Address transportation or canteen supply disruptions immediately.
- Ensure backup plans for emergency operational challenges.
4. Anna Canteen Management
- Supervise operational performance of all Anna Canteens under the assigned kitchen.
- Ensure uninterrupted meal service across all allocated canteens.
- Monitor:
- Food quality
- Cleanliness
- Customer service
- Staff discipline
- Attendance
- Conduct regular inspections of canteen operations.
- Resolve service issues and operational bottlenecks.
- Ensure compliance with foundation service standards.
5. Team Leadership & Workforce Management
- Supervise:
- Kitchen supervisors
- Storekeepers
- Dispatch coordinators
- Drivers
- Canteen staff
- Manage staff attendance, productivity, and discipline.
- Conduct regular staff training on:
- Hygiene
- Food safety
- Operational procedures
- Organizational discipline
- Coordinate with HR for staffing, recruitment, and workforce planning.
6. Reporting & Administrative Responsibilities
- Maintain daily reports on:
- Production
- Stock movement
- Dispatch
- Canteen operations
- Attendance
- Losses/wastage
- Submit operational MIS reports to senior management.
- Coordinate with finance for stock valuation and expense control.
- Ensure documentation readiness for audits and inspections.
7. Cost Control & Operational Efficiency
- Monitor food cost and resource utilization.
- Control wastage in production and distribution.
- Optimize supply chain and logistics expenses.
- Improve manpower efficiency.
- Ensure adherence to allocated operational budgets.
8. Vendor & Stakeholder Coordination
- Coordinate with procurement teams and suppliers.
- Ensure timely availability of raw materials.
- Liaise with government officials, local authorities, and partner organizations when required.
- Maintain strong coordination between HKM Charitable Foundation AP and Touchstone Foundation operational policies.

Reporting Structure

Objective:
To ensure efficient, disciplined, hygienic, and cost-effective functioning of centralized kitchens and Anna Canteens while delivering consistent food service under HKM Charitable Foundation AP & Touchstone Foundation standards.
Job Types: Full-time, Permanent
Pay: ₹35,000.00 - ₹45,000.00 per month
