Job Summary
The Production Head will be responsible for leading the complete manufacturing operations of the Idli Batter and Ready-to-Cook (RTC) product division. The role involves planning, production execution, quality compliance, manpower management, process optimization, cost control, inventory coordination, and ensuring timely delivery while maintaining the highest food safety and hygiene standards.
Key ResponsibilitiesProduction Operations
- Plan and execute daily, weekly, and monthly production schedules based on demand forecasts.
- Ensure uninterrupted production of idli batter and ready-to-cook products while meeting quality and productivity targets.
- Monitor production efficiency, yield, wastage, and overall equipment effectiveness (OEE).
- Optimize production capacity and improve manufacturing processes.
- Coordinate with procurement, maintenance, quality, warehouse, and dispatch teams.
Quality & Food Safety
- Ensure compliance with GMP, GHP, HACCP, FSSAI, and other food safety standards.
- Monitor fermentation parameters, batter consistency, shelf life, and product quality.
- Ensure adherence to SOPs and quality control procedures.
- Investigate quality complaints and implement corrective and preventive actions (CAPA).
Manpower Management
- Lead, train, and supervise production supervisors, operators, and plant workers.
- Prepare shift schedules and manpower deployment plans.
- Drive employee engagement, discipline, and performance management.
Maintenance & Equipment
- Coordinate preventive and breakdown maintenance of production machinery.
- Ensure proper utilization of grinders, mixers, fermentation tanks, packaging machines, chillers, and utilities.
- Work closely with the engineering team to minimize downtime.
Inventory & Cost Control
- Monitor raw material consumption and minimize production losses.
- Ensure optimum utilization of rice, urad dal, water, additives, packaging materials, and utilities.
- Reduce wastage and improve production yield.
- Control manufacturing costs through continuous improvement initiatives.
Compliance & Documentation
- Maintain production records, batch manufacturing records (BMR), production reports, and process documentation.
- Ensure compliance with internal audits, customer audits, and statutory requirements.
- Implement and monitor SOPs, work instructions, and safety procedures.
Continuous Improvement
- Drive Lean Manufacturing, Kaizen, 5S, and process improvement initiatives.
- Identify opportunities to improve productivity, reduce downtime, and enhance product quality.
- Implement automation and digital reporting wherever feasible.
Qualifications
- Bachelor's degree in Food Technology,,Food Engineering or a related discipline.
- Additional certification in Food Safety, HACCP, Lean Manufacturing
Experience
- 8–15 years of experience in food manufacturing.
- Minimum 3–5 years in a leadership role within an Idli Batter, Ready-to-Cook, Dairy, Frozen Food, or FMCG manufacturing environment.
- Experience in fermented food processing and high-volume production is highly preferred.
