Chef de Partie (CDP) – Garde Manger

Job Summary
Semolina Kitchens is looking for an experienced Chef de Partie (CDP) – Garde Manger to lead the cold kitchen section at our premium Airport Lounge. The ideal candidate will be responsible for preparing high-quality salads, cold appetizers, sandwiches, canapés, and platters while ensuring consistency, presentation, and food safety standards.
Key Responsibilities
- Manage the daily operations of the Garde Manger (Cold Kitchen) section.
- Prepare and present salads, cold appetizers, sandwiches, wraps, canapés, cheese platters, fruit platters, and other cold preparations.
- Ensure consistency in food quality, taste, and presentation.
- Maintain buffet displays and replenish food items throughout service.
- Ensure proper mise en place before service hours.
- Monitor food quality, freshness, and storage in accordance with HACCP standards.
- Follow FIFO procedures and minimize food wastage.
- Maintain cleanliness and hygiene of the work area and equipment.
- Assist in menu planning, recipe standardization, and seasonal menu development.
- Train and supervise Commis Chefs and junior kitchen staff.
- Coordinate with other kitchen sections to ensure seamless service.
Qualifications & Experience
- Diploma or Degree in Hotel Management or Culinary Arts.
- 4–6 years of experience in Garde Manger within hotels, airport lounges, airline catering, or premium hospitality.
- Strong knowledge of international cold kitchen preparations and buffet presentation.
- Experience handling high-volume buffet operations.
- Thorough understanding of HACCP, food safety, and hygiene standards.
- Willingness to work rotational shifts, including nights.
