- Manage complete production operations for ready-to-eat, ready-to-cook, sauces, curries, rice meals, or other processed food products.
- Supervise retort processing, including product filling, sealing, loading, thermal processing, cooling, and unloading.
- Monitor critical retort parameters such as temperature, pressure, processing time, F₀ value, and cooling cycles.
- Ensure proper validation and control of thermal processing to achieve commercial sterility and product safety.
- Coordinate with Quality Assurance, Quality Control, Maintenance, Warehouse, and Supply Chain teams.
- Ensure production targets are achieved within approved quality, cost, and delivery timelines.
- Monitor batch preparation, recipe adherence, cooking processes, filling accuracy, sealing integrity, and packaging quality.
- Minimise production losses, product rejections, wastage, downtime, and material variance.
- Ensure effective manpower planning, shift allocation, and workforce productivity.
- Implement SOPs, GMP, GHP, HACCP, food safety, hygiene, and traceability requirements.
- Maintain batch manufacturing records, production reports, process logs, rejection reports, and daily production MIS.
- Ensure proper cleaning and sanitation of production equipment and processing areas.
- Investigate production deviations, process failures, packaging defects, and customer complaints.
- Conduct root cause analysis and implement corrective and preventive actions.
- Coordinate preventive maintenance and breakdown maintenance with the engineering team.
- Support new product trials, process standardisation, scale-up, and commercial production.
- Train production employees on process controls, hygiene, safety, quality standards, and equipment handling.
- Ensure compliance with BRCGS, IFS, FSSAI, HACCP, ISO, Halal, Kosher, and customer-specific requirements.
- Drive continuous improvement, productivity enhancement, process automation, and cost reduction initiatives.
Required Qualification
- B.Tech / M.Tech in Food Technology
- B.Sc. / M.Sc. in Food Biotechnology
- Degree or Diploma in Food Processing Technology
Pay: ₹18,345.60 - ₹69,465.99 per month
