Job Summary
1. Bartender – Duties & Responsibilities
- Prepare and serve alcoholic and non-alcoholic beverages according to standard recipes.
- Greet guests warmly and provide excellent customer service.
- Recommend cocktails, wines, beers, and beverages based on guest preferences.
- Maintain cleanliness and organization of the bar area.
- Ensure proper stocking of liquor, mixers, garnishes, and bar supplies.
- Monitor inventory and inform the Bar Executive of low stock levels.
- Verify guests' legal drinking age before serving alcohol.
- Handle cash, POS transactions, and prepare guest bills accurately.
- Follow hygiene, food safety, and responsible alcohol service standards.
- Minimize wastage and breakage of bar equipment and glassware.
- Prepare mise en place before service and clean up after closing.
- Maintain knowledge of current beverage menus and promotions.
- Assist in stock taking and inventory counts.
- Report maintenance issues and guest complaints to the supervisor.
- Comply with hotel SOPs, safety regulations, and licensing laws.
2. Bar Executive – Duties & Responsibilities
- Supervise the daily operations of the bar.
- Lead, train, and motivate bartenders and bar assistants.
- Ensure high standards of guest service and beverage quality.
- Prepare duty rosters and allocate staff responsibilities.
- Monitor liquor inventory, ordering, and stock control.
- Ensure proper storage of beverages and bar supplies.
- Conduct daily opening and closing checks.
- Control beverage cost, wastage, and pilferage.
- Prepare monthly inventory reports and reconcile stock variances.
- Ensure compliance with liquor licensing laws and hotel policies.
- Develop new cocktails and seasonal beverage promotions.
- Coordinate with Purchase and Stores for timely procurement.
- Resolve guest complaints promptly and professionally.
- Monitor cleanliness, hygiene, and safety standards.
- Conduct staff training on product knowledge, upselling, and service standards.
- Ensure POS billing accuracy and cash reconciliation.
- Coordinate with the Restaurant Manager and F&B Manager to achieve revenue targets.
- Maintain records of breakage, spoilage, and consumption.
- Ensure preventive maintenance of bar equipment.
3. Bar Assistant (Bar Back) – Duties & Responsibilities
- Assist bartenders during bar operations.
- Refill liquor bottles, mixers, ice, garnishes, and other bar supplies.
- Clean and polish glasses, bar tools, and equipment.
- Prepare garnishes and maintain mise en place.
- Ensure the bar remains clean and organized throughout the shift.
- Remove empty bottles, used glasses, and waste promptly.
- Receive and store bar stock as per hotel procedures.
- Assist in stock counting and inventory management.
- Ensure refrigerators and storage areas are properly stocked.
- Wash bar utensils and maintain sanitation standards.
- Support bartenders during busy service periods.
- Report damaged equipment or shortages to the Bar Executive.
- Follow food safety, hygiene, and workplace safety guidelines.
- Assist with opening and closing duties of the bar.
- Maintain a professional appearance and courteous attitude toward guests and colleagues.
