Job Summary
Position: Chinese Chef – Commis 1Key Duties and Responsibilities
- Prepare and cook a variety of Chinese dishes such as noodles, fried rice, gravies, soups and starters as per standard recipes and portion sizes.
- Maintain consistency in taste, quality, texture and presentation of all Chinese dishes.
- Handle the assigned section in the Chinese kitchen (wok, fryer, steamer, dim sum, etc.) and ensure smooth operation during service.
- Ensure all mise en place (cutting, marination, sauces, stocks, garnishes) for the Chinese section is prepared on time for each service.
- Check freshness and quality of ingredients and immediately report any issues to senior chefs.
- Follow food safety, hygiene and sanitation standards at all times, including proper storage, labeling and rotation of stock.
- Minimize food wastage through correct preparation, cooking and storage practices.
- Assist in supervising and guiding Commis 2 and other junior staff in Chinese cooking techniques and kitchen procedures.
- Coordinate with the kitchen team and service staff to ensure timely preparation and delivery of orders.
- Assist in daily stock control for the Chinese section and report shortages or excess to the senior chef.
- Operate all kitchen equipment relevant to the Chinese section safely and correctly and report any malfunction.
- Maintain cleanliness and organization of the work area, equipment and utensils before, during and after service.
- Follow all standard recipes, portion control guidelines and plating standards set by the hotel/restaurant.
- Support menu development by giving feedback on new Chinese dishes when requested by senior chefs.
Position: Chinese Chef – Commis 2Key Duties and Responsibilities
- Assist Commis 1 and senior chefs in preparing and cooking Chinese dishes as per instructions and standard recipes.
- Perform basic preparation tasks such as washing, cutting and chopping vegetables, meats and seafood for the Chinese section.
- Prepare basic components like sauces, marinades, stocks and garnishes under supervision.
- Set up the workstation with required ingredients, tools and equipment before each service.
- Maintain cleanliness and organization of workstations, cutting boards, knives and small equipment throughout the shift.
- Follow food safety and hygiene standards, including correct storage, labeling and temperature control of ingredients.
- Assist in receiving, checking and storing Chinese food supplies as directed by senior chefs.
- Refill and replenish mise en place during service to ensure smooth operation of the Chinese section.
- Support the team during peak hours by quickly and accurately carrying out assigned prep and cooking tasks.
- Learn and practice proper Chinese cooking techniques (wok handling, stir‑frying, steaming, deep‑frying, etc.) under guidance.
- Report any shortages of ingredients or equipment issues to Commis 1 or the Chef de Partie.
- Dispose of waste correctly and help keep the kitchen area, floors and bins clean and safe.
- Adhere strictly to standard recipes, portion sizes and plating instructions given by senior chefs.
- Show willingness to learn, take feedback positively and develop towards handling an independent section in the Chinese kitchen.
