ABOUT DOUX N CIELO
Doux N Cielo is a growing start-up bakery and patisserie based in Perumbavoor, Kerala. We specialise in handcrafted European-style pastries, viennoiserie, artisan breads, celebration cakes and contemporary desserts.
As an early-stage business, we offer team members the opportunity to grow alongside the brand, take on greater responsibility and contribute ideas to our products, systems and future development.
We are currently expanding our kitchen team and hiring across different experience levels. Our main vacancy is for a Sous Chef, but experienced pastry chefs, bakers, Chefs de Partie, Commis Chefs, recent culinary graduates and interns are also welcome to apply. The position offered will be based on each candidate’s skills and experience.
ABOUT THE SOUS CHEF ROLE
We are looking for a skilled, responsible and passionate Sous Chef to support the daily operation of our bakery and pastry kitchen. The successful candidate will work closely with the Head Chef, supervise junior team members and ensure that every product meets our quality standards.
KEY RESPONSIBILITIES
- Assist the Head Chef in managing daily bakery and pastry production
- Organise production schedules and allocate responsibilities
- Supervise, train and support chefs, commis chefs and interns
- Ensure products are prepared consistently according to standard recipes
- Oversee the production of pastries, cakes, desserts, viennoiserie and artisan breads
- Monitor product quality, presentation and portion control
- Maintain stock levels and assist with ordering ingredients
- Control wastage and help maintain food-cost targets
- Ensure correct food storage, labelling and stock rotation
- Maintain excellent food-safety, hygiene and cleaning standards
- Contribute ideas for new products and seasonal menus
- Coordinate production for daily sales and customer orders
- Take responsibility for kitchen operations in the Head Chef’s absence
SOUS CHEF REQUIREMENTS
- Qualification in bakery, pastry arts, culinary arts or a related field is preferred
- Approximately 2–4 years of professional bakery or pastry experience
- Previous experience as a Sous Chef, Chef de Partie or senior pastry chef is preferred
- Strong practical knowledge of pastry, cakes, desserts, viennoiserie or bread production
- Ability to supervise and train junior kitchen staff
- Good production-planning and organisational skills
- Understanding of food costing, portion control and waste management
- Strong food-safety and kitchen-hygiene knowledge
- Reliable, disciplined and able to work calmly under pressure
- Positive attitude and willingness to help build a growing business
