About Us
Cavallo is a new specialty coffee café and European kitchen opening in Jalandhar. Pizza is one of our core programs — made on a professional Italian gas pizza oven, with house-made dough and quality ingredients including fresh burrata. Our Burrata Margherita is a house signature. This is a founding-team role in a brand-new kitchen.
The Role
You'll own the pizza station under the Head Chef — dough handling, oven management, and service execution. We're not making commercial pan pizza; we're making proper Italian-style pizza with fermented dough, and consistency is everything.
Responsibilities
- Manage the pizza station through service: stretching, topping, launching, and turning pizzas in a gas deck/dome oven
- Execute the dough program with the Head Chef: mixing, bulk fermentation, balling, and cold-proof schedules
- Maintain oven temperature discipline and bake consistency across the day
- Prep pizza toppings and sauces to spec (San Marzano-style sauce, fresh mozzarella/burrata handling)
- Keep the pizza station organized, stocked, and spotless
- Track dough and topping par levels; flag shortages ahead of service
- Support the Italian line (pastas, garlic breads) during non-peak hours as needed
Requirements
- 2+ years hands-on pizza experience in a quality Italian restaurant, café, or pizzeria — wood-fired or gas dome/deck oven experience strongly preferred over conveyor/commercial oven backgrounds
- Genuine dough-handling skill: you can stretch a fermented dough ball thin without tearing it, and you understand proofing
- Speed under pressure: you can run the station solo during a full-house dinner service
- Willing to work evenings and weekends (pizza peaks at dinner)
- Hindi/Punjabi required; candidates from Chandigarh/Delhi Italian kitchens welcome — accommodation support possible for the right candidate
