We are seeking a highly experienced and dynamic Production Manager to lead our large-scale Central Production Unit (CPU) Bakery. In this role, you will oversee day-to-day mass baking operations, manage a large culinary and packaging team, and ensure strict compliance with international food safety standards. The ideal candidate will have extensive experience in high-volume commercial baking, recipe standardization, and process optimization.

Key Responsibilities:
1. Production Planning & Operations
- Formulate and execute daily baking schedules to meet retail outlet orders and B2B dispatch deadlines.
- Oversee mass manufacturing across multiple lines including bread, pastries, confectionery, and dry cakes.
- Optimize the utilization of industrial ovens, spiral mixers, proofers, and high-speed packaging machinery.
- Synchronize flour siloing, dough fermentation, and baking cycles to eliminate production bottlenecks.
- Coordinate closely with procurement and cold-chain logistics to manage perishable raw materials.
2. Quality Assurance & Food Safety
- Enforce absolute adherence to standardized recipes to maintain consistent taste, texture, and visual appeal.
- Partner with the QA team to enforce zero-compromise compliance with FSSAI, HACCP, and ISO 22000 (FSMS) regulations.
- Audit critical control points (CCPs) on the production floor and maintain mandatory documentation.
- Implement swift corrective actions for batch failures, under-baked items, or ingredient deviations.
3. Team Leadership & Workforce Management
- Supervise, mentor, and motivate head bakers, pastry chefs, and shift supervisors across a 24/7 operation.
- Conduct technical training on professional dough handling, oven scaling, and specialized piping techniques.
- Manage workforce shifts, attendance, and resource allocation to handle seasonal demand spikes.
- Foster a strict culture of workplace hygiene, safety, and operational accountability.
4. Process Improvement & Cost Control
- Track and minimize ingredient scrap rates, focusing on flour dust, dough trimmings, and giveaway grams.
- Apply Lean principles to reduce cooling times, minimize waste, and optimize product tray movements.
- Control the Cost of Goods Sold (COGS) by tracking recipe yield against raw material variances.
- Prepare and present daily, weekly, and monthly production reports (yield per flour bag, batch cycle times, shrinkage).
Qualifications & Requirements:
- Education: Bachelor’s Degree in Food Technology, Food Engineering, Hotel Management (Culinary Arts), or a related field.
- Experience: 10+ years of overall experience in large-scale food manufacturing or commercial central kitchens.
- Management Experience: 8–10 years minimum in a supervisory or managerial role leading large bakery/culinary teams.
- Certifications: Advanced certifications in HACCP, FOSTAC (FSSAI), or ISO 22000 are highly preferred.
- Technical Skills: Deep knowledge of mass baking technology, recipe scaling, automated kitchen machinery, and cold-chain logistics.
Pay: ₹35,000.00 - ₹50,000.00 per month
