About the Role
Niraamaya Retreats Surya Samudra is seeking an experienced Sous Chef to support kitchen operations across our wellness-focused luxury property. This role works closely with the Executive Chef to execute menus, lead the kitchen brigade on the floor, and maintain the consistency and quality expected of a luxury wellness resort.
Key Responsibilities
- Oversee day-to-day kitchen operations and lead the team in the Executive Chef's absence
- Execute menus with consistency in taste, plating, and presentation, including wellness-aligned and Ayurveda-informed dishes
- Supervise and mentor Chef de Partie and Commis Chefs across kitchen sections
- Ensure adherence to recipe standards, portion control, and food costing discipline
- Maintain strict food safety, hygiene, and HACCP compliance across the kitchen
- Support inventory management, stock rotation, and coordination with suppliers
- Coordinate with the wellness team on dietary-specific and therapeutic meal requirements for guests
- Step in for menu planning and special event execution as needed
Requirements
- Diploma/degree in Hotel Management or Culinary Arts
- Minimum 5+ years of culinary experience
- Prior experience in a luxury resort, boutique hotel, or 5-star property preferred
- Strong understanding of kitchen operations, food safety, and team supervision
- Ability to work efficiently under pressure in a high-standards guest environment
- Good communication and leadership skills
Preferred Qualifications
- Experience with wellness cuisine, Ayurvedic food principles, or spa/resort dining
- Familiarity with Kerala or South Indian regional cuisine
- Experience training and developing junior kitchen staff
