Job Summary
The Kitchen Manager is responsible for ensuring the smooth day-to-day operations of The Dabba Central kitchen. The role focuses on maintaining food quality, hygiene, inventory, staff management, and timely preparation of meals so that every customer receives fresh, consistent, and delicious food.
Key Responsibilities
Kitchen Operations
- Oversee daily kitchen operations from preparation to dispatch.
- Ensure all meals are prepared according to standardized recipes.
- Maintain consistency in taste, portion size, and presentation.
- Ensure orders are completed and dispatched on time.
Food Quality
- Monitor the quality of ingredients before use.
- Conduct regular quality checks during cooking.
- Ensure rotis, vegetables, dal, rice, and other items meet The Dabba Central quality standards.
- Immediately resolve any quality issues.
Staff Management
- Supervise cooks, helpers, and kitchen staff.
- Assign daily responsibilities.
- Ensure staff follow kitchen SOPs.
- Train new employees on recipes, hygiene, and processes.
- Maintain discipline and teamwork within the kitchen.
Inventory Management
- Track daily consumption of raw materials.
- Maintain stock levels of groceries, vegetables, spices, packaging materials, and kitchen supplies.
- Report low stock in advance.
- Minimize wastage through proper inventory management.
- Verify incoming supplies for quality and quantity.
Hygiene & Safety
- Ensure the kitchen remains clean and organized throughout the day.
- Enforce food safety and hygiene standards.
- Ensure proper cleaning of utensils, equipment, and workstations.
- Monitor personal hygiene of all kitchen staff.
Production Planning
- Plan daily production based on customer orders.
- Coordinate with procurement to ensure ingredient availability.
- Manage preparation schedules to avoid delays.
Coordination
- Coordinate with delivery and operations teams for smooth dispatch.
- Communicate shortages or operational issues promptly.
- Handle urgent customer-related food requirements when needed.
Reporting
Maintain records of:
- Daily production
- Inventory usage
- Wastage
- Staff attendance
- Kitchen issues
- Equipment maintenance requirements
Required Skills
- Experience managing a commercial kitchen.
- Strong leadership and team management skills.
- Knowledge of food safety and hygiene practices.
- Good inventory management skills.

- Basic record-keeping and reporting skills.
Preferred Qualifications
- Prior experience in a cloud kitchen, restaurant, or catering business.
- Knowledge of Indian cuisine.
- Experience handling high-volume meal production.

Pay: ₹25,000.00 - ₹30,000.00 per month
