Job Summary
The Commi I – Bakery is responsible for preparing and baking a variety of breads, pastries, cakes, desserts, and other bakery items while maintaining the highest standards of quality, hygiene, and food safety. The role requires knowledge of bakery production, consistency in product quality, and adherence to hotel recipes and standards.
Key Responsibilities
- Prepare and bake breads, rolls, pastries, cakes, cookies, and other bakery products according to standard recipes.
- Ensure consistency in taste, texture, presentation, and portion sizes.
- Assist in planning and preparing daily bakery production.
- Operate bakery equipment safely and efficiently.
- Monitor baking times and temperatures to achieve quality results.
- Maintain cleanliness and organization of the bakery section.
- Follow food safety, hygiene, and HACCP standards at all times.
- Store ingredients and finished products correctly to maintain freshness.
- Minimize food wastage through proper stock rotation (FIFO) and portion control.
- Assist in receiving, checking, and storing bakery ingredients.
- Coordinate with other kitchen sections to meet operational requirements.
- Report equipment malfunctions or maintenance issues to the supervisor.
- Support the team during banquets, buffets, and special events.
- Perform any other duties assigned by the Chef.
Qualifications
- Diploma or Certificate in Hotel Management, Bakery & Confectionery, or Culinary Arts.
- Minimum 2–4 years of experience in a bakery kitchen, preferably in a hotel or resort.
- Good knowledge of bakery techniques, ingredients, and baking equipment.
- Understanding of food safety and hygiene practices.
Skills Required
- Strong baking and pastry preparation skills.
- Knowledge of bread making, cake decoration, and dessert preparation.
- Ability to work under pressure in a fast-paced environment.

Working Conditions
- Flexible to work shifts, weekends, and public holidays.
- Ability to stand for long periods and lift bakery ingredients and equipment as required.
