Dosa & Porotta Maker (South Indian Commi / Chef)Job Summary:We are seeking a skilled and experienced Dosa and Porotta Maker to join our kitchen team. The ideal candidate will specialize in preparing authentic, high-quality South Indian tawa items, specifically focusing on traditional Malabar/Kerala porottas and a variety of crispy dosas. You will ensure consistent taste, quality, and presentation while maintaining a clean and hygienic workstation.Key Responsibilities:
- Food Preparation: Prepare high-quality dosa batters and porotta dough from scratch daily.
- Cooking: Expertly flip, stretch, and multi-layer flaky porottas and spread thin, crispy dosas on the tawa.
- Menu Variety: Prepare accompanying side dishes, including various chutneys, sambar, and salna/kurma.
- Station Management: Manage the live counter or tawa station efficiently, especially during peak rush hours.
- Quality Control: Maintain consistent food taste, portion sizes, and traditional presentation standards.
- Hygiene & Safety: Clean the tawa and workstation regularly to uphold strict food safety and hygiene guidelines.
- Inventory Tracking: Monitor ingredient stock levels and report shortages to the kitchen manager.
Requirements & Qualifications:
- Experience: Proven experience as a Dosa/Porotta Maker or South Indian Commi Chef.
- Technical Skills: Mastery of dough-stretching techniques for flaky porottas and tawa temperature control for dosas.
- Speed & Efficiency: Ability to work quickly and handle high-volume orders in a fast-paced kitchen.
- Teamwork: Strong communication skills to coordinate effectively with other kitchen staff.
- Flexibility: Willingness to work in shifts, including weekends and holidays.
Pay: ₹22,000.00 - ₹27,000.00 per month
